Chicken Teriyaki Meatballs Meatballs: 1 lb. ground chicken 1 Tbsp grated ginger 4 garlic cloves, minced 1/2 cup panko 1 egg 2 Tbsp green onion, sliced 1 Tbsp soy sauce 1 tsp sesame oil Oil for searing Teriyaki Sauce 1 Tbsp grated ginger 4 garlic cloves, minced 1/2 cup brown sugar or honey 1/2 cup + 2 Tablespoons soy sauce 1/4 cup mirin 1 tsp sesame oil Cornstarch slurry: 2 tsp cornstarch + 1 Tbsp water, stirred Directions: Combine the ingredients for the meatballs (except the oil) and form into meatballs, makes about 16 meatballs. Preheat the oven to 375F. Add enough oil to cover the bottom of a skillet and once the oil is hot sear the meatballs for about 3 minutes on each side. Remove onto a parchment lined baking sheet and bake in the oven for about 16 minutes In the meantime, let’s make the teriyaki sauce and discard most of the oil from the skillet, leaving about 1 tablespoon. Add the ginger and garlic and sautéed for about a minute then add the brown sugar, soy sauce and mirin. Stir until the sugar has melted. Add the cornstarch slurry, it will thicken in a few minutes. Taste and adjust for seasonings. If the sauce is too thick, add a splash of broth. Once the meatballs are done, add them into the sauce and let cook for a few more minutes. Drizzle with a bit of sesame oil on top and you’re done. Serve with rice, sesame seeds and green onion. Enjoy.
