Can there be a replacement for sake or mirin?
No! It's these exact three ingredients that make a decent teriyaki sauce.
I ask someone and she say mirin can be substitute with rice vinegar(use in making sushi)

Can you use liquid aminos instead of soy sauce?
I’ll be making this for my friend who needs gluten free food, and soy sauce has gluten.
You can use tamari which is 100% soy (read the label) and has no gluten
Can you marinade this for longer than an hour? Not sure if it affects the taste if I do it for longer...
Will be a little more intense when you have marinated it overnight.

Sake is a rice wine, even though it's rather brewed like beer than fermented like wine from grapes. It's an absolute necessity in Teriyaki. The alcohol will evaporate during cooking, so no worries about that.
Can I use something else in place of the sake?
No!
Brown sugar and/or honey will balance out the soy sauce. I know she said use “equal amounts” but I would cut back on the soy sauce to lessen the salt.
Can I use rice cooking wine instead of sake?
Yes, absolutely!
Can we only use the mirin and not the sake?
No!

I made it. Thought it tastes too salty to me. So much soy sauce! Next time I think I might add sugar to balance out the soy sauce. I don’t think the mirin has enough sugar content to balance out the soy sauce

Sake is an alcoholic beverage, specifically it is a rice liquor I believe. you can find it at any Asian market near you or a lot of sushi restaurants have it as well.
