I made it. Thought it tastes too salty to me. So much soy sauce! Next time I think I might add sugar to balance out the soy sauce. I don’t think the mirin has enough sugar content to balance out the soy sauce
For sake, you can substitute 1 part rice vinegar to 3 parts water. Don't use rice vinegar as a sub to mirin as mirin is sweet and rice vinegar is not. You can sub white sugar for mirin.

Brown sugar and/or honey will balance out the soy sauce. I know she said use “equal amounts” but I would cut back on the soy sauce to lessen the salt.
