Your cookie recipes are hands-down, my favorite! I use several of them to sell at my local farmers market. also, the corn syrup trick in the glaze helps with about every glaze I do. I have a lemon blueberry bread that I make and I started adding just about a teaspoon of corn syrup to the glaze and it keeps it firmer in my packaging so that it doesn’t stick to the plastic. Genius!

If you coat the inside of your shot glass with a thin coat of oil using your finger, your corn syrup will slide right out without the need for a spatula. Cool video!!!

@9:18 If you have molasses, a Tablespoon added to your light brown sugar and mix well will do the trick. After all, brown sugar is molasses and granulated sugar.

But when I do your recipes I do weigh ingredients and it is amazing to me how different the measures just using a measuring cup versus weighing there is in the amount you get.

Anyway, when I finally did try them, I did not like them at all. But these cookies look fabulous and I'm planning to make them! I'll let you know how my husband and I like them. Made these yesterday (ignoring my inner voice saying "don't bother, you know you'll mess it up" 😀). I LOVE the final product -- they taste exactly like BSC pop tarts -- but I did have some adventures along the way. The main problem was that the dough, even after refrigerating for an hour, was sticking to my hands so badly I had to use LOTS of additional flour to work with it. I followed the recipe exactly, in terms of weights of the various ingredients, so I'm not sure why (although this has happened to me in bread recipes as well -- when everything is in the stand mixer and the dough is supposed to be balling up on the hook, mine may start to but then oozes back into a mass stuck to the sides of the bowl). I did deviate in two ways from the recipe -- one by accident, reversing the amounts of brown sugar vs granulated sugar (but still ending up with 300g total), and by intention, using an unsalted vegetable spread instead of butter for the non-dairy eater in my crowd. But I can't think why those things would cause a stickier dough than what you show in the video. Anyway, I will be making them again! Thank you for posting.

@@SugarSpunRunI made them!! Sooo good I used flaxseed instead of eggs and had to add about tbs of oil and 2 tbs of milk because of the lack of fat from the eggs I didn’t seal them all well so I had some leak but the ones that didn’t turned out perfectly thank you for the great recipe!!

You always have the most interesting cookies. I've wondered if there can be a Reese's inspired cookie but reversed? Like maybe a peanut butter cookie with chocolate inside. I've also thought about a Mounds inspired cookie that is chocolate chip with coconut inside. But haven't figured how to not have the coconut filling be soft.

Total side note….but, isn’t that the best plastic wrap? (The kind that has the slide cutter on the box!) I get mine at Costco. Cookies look great, too!
@@SugarSpunRun so…. it helps if your box is wedged. Mine is up against the counter and in front of my huge, thick cutting board. I lay the “thing” in the cutting board and run the plastic over it….run the cutter….and wha-lah. I’m old. I’ve learned stuff. 🤣
If using weights it will be the same weight. To use all purpose flour using cups you will want to measure out your cup of all purpose flour and then remove 2 tablespoons.
