They Just Offered Us a Baby Calf!!!

- In today's Family Farm Vlog, we head over to take care of another farm while they are on vacation, & they have a baby calf we have to bottle feed, and the cattle farm our friends got this calf from, has also offered us a calf to raise as well. Also Mrs. Cog Hill starts prepping for Thanksgiving by making cornbread dressing and freezing it.
We make our dressing from memory so this is pretty close to ours:
Cornbread Recipe:
2 cups self rising cornmeal mix not just plain cornmeal
1 large egg
2 tablespoons vegetable oil
1/4 cup vegetable oil for the skillet if using cast iron
1 3/4 cups buttermilk or regular milk Start with 1 cup of liquid if you are using regular milk and add the rest as necessary
Instructions
Preheat the oven to 400 degrees.
Place the 1/4 cup oil in the bottom of a 9″ cast iron pan and place in your oven set to 450 degrees while you make the batter.
Pour the cornmeal into a bowl and add the oil, egg, and milk.
Mix until combined.
Once your skillet is sizzling hot, carefully remove it from the oven and pour the hot grease from the skillet into your batter and mix, and then pour in your batter to within 1 inch of the top of your skillet. If you want a thinner cornbread, just don’t pour in as much.
Bake 25-30 minutes or until golden and set.
Cornbread Dressing Recipe:
Ingredients:
1/2 cup butter
3 cups diced celery
2 cups diced sweet onions
1 1/2 teaspoons dried sage
1 teaspoon poultry seasoning
1 teaspoon of thyme(optional)
Cornbread Crumbles
3 cups soft, fresh breadcrumbs
3 - 4 large eggs, lightly beaten
7 cups chicken broth
1 tablespoon freshly ground pepper
Salt to taste
Directions:
Step 1
Preheat oven to 400°. Melt butter in a large skillet over medium-high heat; add celery and onions, and sauté 5 to 6 minutes or until onions are tender. Stir the herbs, and sauté 1 minute.
Step 2
Stir together Cornbread Crumbles in a large bowl. Stir in eggs, next 2 ingredients, and celery mixture, stirring until blended. Divide cornbread mixture between 1 lightly greased 13- x 9-inch baking dish and 1 lightly greased 9x13 or 8 inch square baking dish.
Step 3
Bake at 400° for 45 to 55 minutes or until set and golden brown.

Hearing you say most people don’t have cows ride up front reminded me of the time my grandma used my grandpa’s new truck to bring two baby calves home in the cab riding on the laps of my mama and aunt. Grandpa was not happy when he found out!!
The headbutt is instinctual. Baby calfs headbutt mama's milk sack to get the milk flowing.

Henri is adorable. I wanted to come through the internet to give him a big hug. I miss my days working on a dairy farm. After milking.and feeding the cows , feeding the calves I would hug all of them.
We have many dairy farmers near us and whenever they have a bull calf they offer it to us. It’s such an exciting time to bring a calf home lol

Mrs CogHill, I’m so happy to see you gearing up for thanksgiving, we can’t go to our son because his other half family isn’t being cautious like we have been. My husband cancer is in great shape, low numbers etc I can’t take a chance. I’m so sad that we have to think like this, my dad passed on 9/29 so this is the first holiday with out him. He loved good dressing and lots of homemade gravy. Mrs. C, I’m going to start getting things together, you’ve inspired me to start preparing and buying.. Turkey for 3 please or do I just buy a Costco chicken and doctor it up?

BTW: I use an electric black and decker chopper to prepare my onions, celery, and bell peppers for my cornbread dressing. I also like to put chunks of chicken or Turkey meat mixed in my dressing, along with a cup of oatmeal or crumbled crackers. You can also add a couple slices of white bread to it. I always make enough for the freezer also. Oh yes, I like to roll and cut my collard greens into 2 inch pieces. It is SO DELICIOUS! But your collard greens look really DELISH, too!

My father was from Oklahoma, my Mom was a first generation Italian. My Gran taught my Mom to make their traditional cornbread for stuffing, but my Mom couldn't help herself and also added a couple of handfuls of freshly grated Parmesan, and tons more garlic & a link or two of Italian sausages. I tell you what, I had the BEST of both worlds in one dish!
I use to love watching calves nursing from mamas. They would butt mamas bag if milk wasn't coming fast enough. I was amazed at what mama cows put up with!! 🙂

To avoid getting all slobbered up, feed Henri thru the fence...stay on the outside. Have someone feed and water rabbits at the same time.

Henri is doing whats natural. Calfs headbutt the cows utter to make her release the milk. Im sure it's good but I almost cried when she smashed up that cornbread!
