    This takes about 1 hr 10 mins to fully bake. I pulled it out at 50 min, cut out a slice and the bottom wasn't fully baked. But hubby ate it and loved the flavor. So I'm popping it in another 10-20 mins to get that bottom fully baked. But please note, my oven heat can be different than the creator.

      Thank you for your feedback. Yes, different ovens can take more or less to cook the bread.

      I had the same issue, and I ended up flipping the mostly baked loaf over and putting it back for 15. The flavor is wonderful, it's worth figuring out

      I always use full fat Tesco (UK) own brand cottage cheese.

    Should one strain the cottage cheese so it will actually bake?

      I haven't strain the cottage cheese for this recipe. You can if your cottage cheese is very watery.

      I just realized that the cottage cheese was not full fat. That may have been the problem.

      The full fat cottage cheese is thicker than the low fat one. The low fat can still work but you'll need to strain it. I use full fat in all my recipes.

    What size loaf pan did you use? I have 8x4 and 9x5 and the baking time varies between the two.

      To be honest, it didn't come out well for me. It came out very wet last night, so I thought it might improve with an overnight rest in the fridge. I followed everything to the letter, and yet mine came out very wet, more like a flan. It didn't get better this morning, I'm sorry to say. The almond flour was real, so that wasn't the problem. I have a feeling if I had used one or two eggs less or more almond flour, it might have set up better. I'll keep at it, as we really want bread, but this particular effort didn't work very well for me. I'm sorry. I'll be grilling it in a pan this morning to serve with soft eggs, so we'll enjoy it, I'm sure.

      Oh, I'm really sorry it didn't come out as you wanted it to. Different almond flour brands tend to give slightly different results, unfortunately.
      Yes, fewer eggs or a little bit more flour would be better in this case. Maybe, a tablespoon extra almond flour next time if you're using the same brand.

      @@CoachRallyRus We're eating it shortly. I'm frying it up in a pan with butter, like polenta. It's very filling and will do fine for a hearty breakfast.

      @@CoachRallyRus Just a note: I fried the slices of this recipe in butter, and oh my were they good. It was almost identical to polenta, and as a side dish we had it twice today. So overall, it was a good thing. Now I have a recipe for polenta, and I will remake it.

      Yes, you can. The taste and texture will be different. You'll need to use less coconut flour. I'm testing it myself and I'll publish a video when I'm happy with the exact measurements 😊

    Can I sub the almond flour for chickpea flour?

      Thank you for your question! Chickpea flour isn’t a good substitute for almond flour since it’s higher in carbs and not keto-friendly. It reacts differently as well.       The exact calories will depend on the product brands you use. The macros I've calculated are based on the product brands I use, and they are only for guidance.
