I have a feeling if I had used one or two eggs less or more almond flour, it might have set up better. I'll keep at it, as we really want bread, but this particular effort didn't work very well for me. I'm sorry. I'll be grilling it in a pan this morning to serve with soft eggs, so we'll enjoy it, I'm sure.
Oh, I'm really sorry it didn't come out as you wanted it to. Different almond flour brands tend to give slightly different results, unfortunately. Yes, fewer eggs or a little bit more flour would be better in this case. Maybe, a tablespoon extra almond flour next time if you're using the same brand.
@@CoachRallyRus We're eating it shortly. I'm frying it up in a pan with butter, like polenta. It's very filling and will do fine for a hearty breakfast.
@@CoachRallyRus Just a note: I fried the slices of this recipe in butter, and oh my were they good. It was almost identical to polenta, and as a side dish we had it twice today. So overall, it was a good thing. Now I have a recipe for polenta, and I will remake it.

I had the same issue, and I ended up flipping the mostly baked loaf over and putting it back for 15. The flavor is wonderful, it's worth figuring out

I always use full fat Tesco (UK) own brand cottage cheese.
Should one strain the cottage cheese so it will actually bake?
I haven't strain the cottage cheese for this recipe. You can if your cottage cheese is very watery.
I just realized that the cottage cheese was not full fat. That may have been the problem.
