- This simple blueberry muffin recipe is easy and delicious. Here I will show you how to make blueberry muffins, this muffin recipe is simple to follow and very inexpensive. Give these easy homemade blueberry muffins a go and you will not be disappointed. Here is the full blueberry muffin recipe.
180g / 6.5oz Plain Flour 0.09
80g / 3oz Caster Sugar. 0.12
2 tsp Baking Powder 0.06
½ tsp bicarb 0.02
100g / 3.5oz whole milk 0.06
40g / 1.5oz Veg oil 0.03
20g / 0.7oz butter 0.15
1 egg 0.13
100g / 3.5oz Blueberries 1.19
Total cost 1.85
Makes 6 muffins @ 0.30 each
Combine the flour, sugar, baking powder and bicarb in a bowl.
Mix together the egg, milk, and veg oil
Melt the butter and add it to the wet ingredients.
Pour the wet ingredients into the dry stirring all of the time.
Keep stirring until you have a smooth batter mix,
Roll the Blueberries in a little flour and stir into the batter mix.
Divide the mixture into a muffin tray.
Bake for 12 - 18 mins at 200c / 400f / Gas 6

I'm so glad you used oil and butter. It's a conflict of bakers using oil for moisture or butter for flavor. Using both gives both characteristics. Love it. Will try them. Thank goodness

If you've eaten the blueberrie, then chopped tinned apples or peaches works well. Don't forget to put the blueberry box in the bottom of the bin, hide the evidence.

If you diced 1 apple & added a 1/2 tsp of cinnamon it would make lovely apple cinnamon muffins : bit cheaper than the blueberries

Another great video. "Wonky" blueberries from Aldi or Lidl might make it cheaper for people on a budget. Also, if you see blueberries reduced because they're short dated, they freeze great. 👍

Now THAT'S an idea! I usually throw away citrus peels, but I could use them to flavor muffins instead. That would give me orange muffins, grapefruit muffins, lemon muffins: Waste not, want not. And with a touch of lemon juice for more flavor I would have mixed citrus muffins.
Cranberry orange is a nice mix.
And a few chopped walnuts added in will take them over the top. 😊@@donnadoriand7324

Have a plate of orange zest air drying on the counter and the last two oranges from the bag waiting. Every penny/pence adds up.

These look delicious. My 7 year old grandson loves blueberry muffins. I have a recipe I use but the tops always feel sticky, and damp, but are cooked in the middle. This can be a project for him to cook, and for me not to spend $5.00 at the grocery for 4 muffins. Thank you

I use frozen blueberries and frozen raspberries, only frozen fruit I will use , approx £2- £2.50 for 400grams so a huge difference in price . Great recipe again from you 👍👍👍

Those are some lovely muffins, they look delicious! My own advice/suggestion is to add a spoonful of jam or jelly into each paper “cup” while keeping the mixture plain, it’s another nice flavouring and doesn’t require any fresh fruit or berries.

Tried them today but with some added lemon zest and juice. Taste is great, had to add a bit more milk as the batter wasn't as runny as expected. 8/10 from me and my gf, love your channel!

I tend to buy frozen blueberries that are a bit cheaper per use. I know it’s not quite the same as fresh, but a bit more budget friendly. Also, your muffin case idea is genius!
