Arlene, I always make dumplings with corn meal and white flour mixed, but I've never thought, of putting coconut milk, and ochroes into salt fish. Very nice video. If you read the perfect storm you will find a version of where salt fish came from. According to the book the salted fish with the bones were sent to the Caribbean and other parts of the world to feed slaves and others. The best portions of the fish were salted and kept for the wealthy. This explains why when we were younger the salt fish we had were full of bones. Not sure if boneless were even available in the Caribbean. Salting meats and fish is a preservative. Countries like New Zealand still export salted fish. I think the fish is cod fish.

Salted fish always existed in fishing communities- to keep the fish preserved for longer periods. In St Vincent/ Bequaia they call it corned fish. In the East Indies - China etc - very much so. Very good salt fish is more expensive than meat in many places - and it goes a long way because of the very strong flavor. Best used to come from New Foundland /Canada. I love the Cristobal brand. Hard to get, even here in the States.
That’s different but coconut milk make everything taste so good, y’all should try curry salmon with coconut milk and white rice that’s awesome

Enjoyed your cooking and information. I can't wait to try this recipe! But your story on salt fish was incorrect. Salting was a way to preserve fish and meat in the centuries before canning and refrigeration. Cod and other fish were caught mostly in the Grand Banks off of Nova Scotia in Canada and a series of smaller banks off of New England in the future USA, then British colonies. Shad, herring, and other sea-going fish that spawned in enormous numbers in American rivers were also used. The better grades and species of fish were sold in the American colonies or traded to England or Europe. The poorer grades and species of fish were traded to the sugar and spice colonies of the Caribbean to feed the slaves.This trade made commercial fishing one of the first profitable industries in the northern colonies of America in the 16th and 17th centuries. Trading cheap foodstuffs for the slaves of the Caribbean and luxury foodstuffs for the rich planters provided major export markets for American farmers, flour, salt pork and beef, cornmeal, rice from South Carolina and Georgia, etc. building American prosperity while tragically supporting slavery in the Caribbean and the American colonies.

Salted cod was a dutch and Norwegian,Vikings prepared the cod fish for harsh winter ahead it's is a method used for curing food like smoking another island favorite smoked herring get your facts right. And Bacaloa is Latin for saltfish,Sparrow played on women honey calling it you know

Im sure your a good cook, but your co- ordination and technique's can be improved.... eg. why cook the sallfish first then the dumplings. the whole idea in to get in and out of the kitchen as quickly and efficiently as possible , completing all dishes at the same time!
