Ya mon! Wah gwaan!? I went to Jamaica with my boi to visit his family this year for ten days. Westmoreland parish. We were in a fairly rural and quite poor area. Able to go get as much coconut and breadfruit as we wanted. They raised meat foul, common foul, goats, and pork. One cousin raised beef cow on his dads land and one other cousin raised rabbits at his mums. We ate it all from their land. Every ting! Every ting! The only meal cooked inside was breakfast by his mum. Every singe day. I helped her with ackee, plucking chicken, and watched her do the goat stomach and intestines for the goats head soup. The rest of the time (day) we cooked outside. In the “kitchen” using wood fire or coal in a barrel. A lot of the food we cooked required a lot of time to prepare.
The best tasting meal we ate and the fastest one to make was salt mackerel, roasted breadfruit and some seasoned dumplings. The veggies with the fish are what made it so good. We boiled the mackerel for a bit. The mackerel down there was whole split down the middle and came out of a bucket of salt. Respect! Lickle more I’ll check you again!

After watching DK for quite some time and hearing about the Scotch Bonnet pepper for the first time in my life (I'm 63 yrs old) and since they aren't sold anywhere here where I live I ordered some Scotch Bonnet Pepper seeds online and I've got some growing. I love hot peppers and to be honest, the scotch bonnet isn't too hot for me but they're a sweeter hot pepper which is amazing. Thanx.
As always Deddy, your food looks delicious, but your presentation is also very good! This recipe reminds me so much of my childhood with the ground provisions, but I have to admit, I prefer it like Sasha, with the potatoes, yam and DUMPLINGS. Jamaicans love their FLOUR😋😀

Yes it salt cod (saltfish), and u have to boil it to get the salt out. Some people boil it 2 times if it's too salty for their taste.
