    I tried this today and it turned out juicy and tender, i was really amazed with how the brining process changed the whole dish. I used lemongrass instead of rosemary. I hope you can do a bqby back ribs video. Thanks!

    I have recently found also a kitchen device named "Fast Cutlet Maker" that breaks the meat lobes and after it have clear cube pattern on it. Its very popular among polish people.

    1 tbsp salt and enough water ...rosemary,garlic and peppercorn for brining..1 tsp paprika,1 tsp turmeric and 1tbsp brown sugar

      Same here. The whole reason I'm watching a video is because I want it to be kind of like I'm watching television. When was the last time you saw a show on the Food Network where all it is is music and text on the screen? I want the person to talk to me, teach me, explain what they're doing and have a personality while going about doing it. Otherwise I could go read a website recipie on the internet.

    Baking them in a pan covered with foil makes the chops extremely tender. Once they're cooked take off the foil and let them brown. A lot of juices will be rendered from doing it that way. My chops are never dry. This method is good too.

    This velveting method works really well. The interior is nice and juicy unlike most pork chops I have had even at high end restaurants. I wonder if the water is the key, and if still work if I just leave out the other ingredients.

      The salt in the water is what makes it a brine. Soaking it in plain water will not have any tenderizing benefits. The herbs and other additions to the saltwater build a flavor profile. But salted water improves the meat’s texture and cooking qualities.

    A quicker method: Tenderize your pork chop by pounding it flat ,and season both sides of it.Place a pan on the stove on medium high. Once the pan has gotten hot ,add a teaspoon of your favorite oil. Place the pork chop in the pan and cook for one minute on one side only. Flip the pork chop over and place a tight fitting lid on top and turn the burner down to low. Cook for ten minutes exactly, without ever lifting the lid. After ten minutes take the pan of the burner ,and let it sit without ever lifting the lid for another ten minutes. After you have let them sit for 10 minutes they are now done! It takes a total of 20 minutes to cook, and you can cook more than one at a time and they come out juicy and tender!

      Shyne Paylor, pork is actually very healthy. They gave us the wrong info for decades to sell us and get us sick with all kinds of vegetable oils. Lard and real butter are very good for us.

    Looks good. I'll give it a go sometime, but I'll be substituting butter or another oil for the olive oil, because even though it's very good for you at room temperature or cooler, many nutritionists strongly advise against heating it, due to the release of free radicals.

      Hello, Wayne! yes, you do have a point on that one, but I kept on seeing so many chefs using olive oil for cooking, so I did some researches. Most of the studies claimed and advised to use oils from safflower, canola, sunflower, etc., when cooking on a high heat, but some of the studies also suggested that it is hard for us to exceed such high temperature, so we rest assured. However in this video, I might have had to use sunflower oil.

      Hi Eric, I feel your frustration, however the whole point of cooking something is to make it on your own, with the help from the videos, as long as it is not burnt or raw, you will be just fine. Why don't you go with confidence and nail it? :)

    Overcooked in underheat. Pan and oil not hot enough. Higher heat, one flip only, baste baste baste. Rest then cut. A solid B-. Love the brining and marinade, I will absolutely use this on a double cut chop. Great plating! Include your side preparations/recipies next time. And get some nice crusty bread next to that bad boy!       I have to wonder if those spices are necessary. I'm not a spice fan but love a good chop. Actually, it would be no trouble to marinate it overnight. I'd put it in a plastic bag with salty water and go to bed. I'm sure scoring it before makes the salt water penetrate the chop better. Yum, all that pork fat is sure to add to the flavor.

      @@lynnewebb8881 I wouldn't score it. Just brining is enough. Maybe poke it a few times with a fork.
      As for the spices, they will add subtle flavor during the brine. I usually just do salt, peppercorn, and a bay leaf

      There are several factors in fat loss - exercise, diet, motivation etc.

      TAYSHA WATSON Hi Taysha, I used olive oil for cooking, and the cut was the rib pork chop and that made it really moist, as the bone prevented it from drying. Hope you get a good result trying this! Best of luck :)

    This is another wonderful way to prepare chops, but almost every time I shop for pork chops they don't have any fat at all !

    This is a little over the top for just a nice juicy tender pork chop. I have never went this far as to tenderize my chops...they come out tender...u have to cook over low heat in a cast iron...heat will break it down

    Great recipe but personally I would have laid the pork chop on a bed of white rice and drizzled an onion mushroom gravy on top

    pork chops with out fat are for making pulled pork and tacos. Real pork chops are great for fried , fried breaded or baked breaded. Gotta have the fat for real chop..great video

      Hi thanks and the pork looked a little pink because it was brined(notice how hams are slightly pink in color?). Just to clear some worries :) No need to worry too much if you wanna try it

      I personally think its overcooked. Take it out of the heat earlier and let it rest for the perfect pink Centre.
      Recommended cooked temperature is 145F.

      J MarshallC . Scared of medium cooked pork and whether you get away with it, will depend on where the meat is from, some pork in some countries cannot be cooked and eaten like that! I love the recipe, looks yummy but Id BBQ it instead.

    It's definitely not raw as some idiots in the comments might think. pork meat white = not raw!
    but please - i mean please!!! don't put sugar on meat right at the beginning. it burns the bottom of the pan and it burns before the actual meat surface can get a crust. and you want that crust, everyone wants it. who doesn't want another layer of flavour? don't cut a pork chop, medium high heat, take your time.

      Well, if you really want a sugary glaze, you put it at the end - when the meat is almost cooked. Normally sugar coatings are only used when you cook in the oven or when you grill the meat. And always at the end.

    Can the rosemary and garlic from the brining be reused, say as part of a sauce for the pork? Or best just to toss it out?

      if you are making any sauce using them, please do make sure they are all cooked enough to kill any possible bacteria. What I would do is to save some rosemary and garlic before the brining, and use them instead. Hope that helps!

    Looks great, I'll definitely be trying this soon! Just curious about the actual length of time of brining...you mentioned overnight. So prepare the chops and then into the brine at around 7pm one day, then brine til 5pm the next?

    Pork chops are a pretty simple food, seems like a lot of prep to me just for pork chops. I usually bake mine in my oven with potatoes and gravy near the end, comes out just fine and tender every time.

    I love pork chop fat but would try to find a leaner one(s). Your method worth a try, a lot of extra work though. I usually make 6 smaller ones at a time and heat with a little water in bottom of pie plate for moisture and loosely vented with foil slowly in oven, 300 or 325F, as leftovers. You could do that with yours. People wouldn't necessarily know they had been reheated . . .excellent with scalloped potatoes even the Betty Crocker "cheater" ones lol. I'm not used to so many herbs and spices the way I grew up.
