Finally! A wonderful sauce for pan seared pork chops. You don't know how long I've been looking for something like this. When we make pork chops I have to wrestle the cast iron skillet away from my husband or he makes cream gravy that you could use as glue to wallpaper the kitchen. I kid you not. And he seasons it by splashing in Lone Star. This looks amazing. Thanks! (Ok I love you saying Mom and Dad about yourselves talking to the woobits. Err, dogs. You're good people!)

I made this recipe, using what I had on hand (four skinny, boneless porkchops), reduced the searing time to 3 minutes on each side, and they turned out great. So tasty! I had to substitute a slice of finely diced regular onion, but I even had a little fresh thyme from my half-planted herb garden. Served the chops over noodles, with applesauce on the side. M-m-m! God bless you, brother! :)

  • @jessebanwell5705

Kent, I have a tip for heating up cast iron on a coil stove top. I turn my burner up to the halfway point. Yes, that's too hot for the task. I then put the pan on upside down, so no part is touching the burner. It will quickly come up to heat, with no damage to the pan. Been doing this for years.

Started checking out Kent's cooking videos the other night and my wife says, "why are you watching that cowboy? Turn that off, I'm trying to sleep." Well, yesterday I took out our 12 inch cast iron skillet, removed the sticky buildup that I thought was "good" seasoning and re-seasoned it according to Kent's instructions. Cleaned our oven too while I was at it. Today I marinated some nice pork chops, threw them in the fridge for a few hours and then tossed them in my medium hot, rejuvenated pan. The meat cooked up just like in the video and then I made the sauce. Wow!!! The pork was so tender and flavorful with a hint of lime and the sauce simply amazing. We enjoyed these chops with some of my wife's creamed spinach (which is delicious as well) and she says, "we need to try more of that cowboy's cooking."

Kent, I must tell you I just made this recipe. I was going to fix pork chops anyway, so this video was great timing. I had to make a few modifications, for what I had on hand. But I think I captured the essence! I had boneless chops. They were an inch thick. I used olive oil. Also, I subbed a vidalia sweet onion for the green onion. And I used dried thyme. Otherwise, dead on. I enjoyed it immensely. Thanks so much for all you do.

This man seems so sweet! I think I’ll have to watch his videos more often because his voice put my toddler right to sleep, which is normally a task lmao. Also the puppy 😭❤️
Also, as far as that herb goes, you can put it through a mesh strainer and the leaves fall right off ❤
Great video all around though! Thank you!

That sear looks amazing cowboy! Searing them in cast iron is my go-to method for getting the most amazing crust on chops and burgers.
And hey you know me, I'd try and *iron* things out with a pun, but I ld hate to get *CHOPPED!* 😋

Some sauteed mushrooms and onions in that cream gravy would've been a good addition, with a side of German spaetzle and braised red cabbage. 💙

Always cut the fat wrap on all my meats…pork and beef. Especially on a NY Strip…helps to shrink down the fat and then when done & rated…sear the heck out of the fat caps. Adds another caramelized edge to the finished meat. Delish! Nice pork chops, Kent!
