I didn't have maple syrup so I subbed with honey and molasses (1/2 C honey 2 T molasses) and added a little MCT oil (it needed a little more moisture, was out of vanilla) I am SO glad I came across your video!! You can sub out liquid monk fruit for maple syrup in most recipes but you will need to add about half the amount due to the sweetness. That being said, I don't know how these will turn out if you only have half the sticky sweetener. You could always try it and see what happens.
As far as my calculations go i would add 1 egg and you can sub out 10 drops of liquid stevia for the 1/4 C maple syrup and add maybe 1/4 C soft butter. They may be more like shortbread. I haven't tested this myself, but it should work.
Yes, I have more GF recipes. If the recipe calls for all-purpose flour, you can sub it to GF. I have a few more vegan baking recipes coming....definitely Dairy-free, Gluten-free.

You can do 176 celsius. I'm not sure if the honey will work, I haven't tried it.
