I made half recipe first, in case if I messed up, not much is wasted...and it turned out great! The recipe is simple! I actually made the effort in going to the store to get an almond extract and that really makes the difference! The only thing I should've done a bit better was pushing the crushed walnuts more into the dough (I used walnuts since pistachio wasn't available)...i just lightly patted the walnuts and when I cut and rebaked, quite a few fell off the dough. Still tastes great though!
I will try making this with swerve brown for keto biscotti. I think I would add almond flavoring maybe 1/4 tsp, with slivered almonds on top instead of pistachios.

Hi Rekha, Sugar keep the dough intact I have not yet tried with any sugar substitute so cannot suggest. Gluten free flour are very difficult to handle but you can use sugar subtitles if you are using gluten flour.
I have never tried using so not sure it it will work, but You can make a psyllium "egg" : combine 1 teaspoon psyllium with 3 tablespoons water. Stir together and set aside for 10-15 minutes until the mix is thick and gelatinous. Use to replace eggs as a binder in baked goods in a 1:1 ratio.
* Flaxseed: (available as brown or golden seeds which you pulverize in a small coffee/spice grinder first or start with ground flaxmeal): Use ¼ cup for each large egg. Combine 1 teaspoon ground flaxseed with ¼ cup boiling water. Let stand 5 minutes to thicken and cool slightly. Refrigerate flax to avoid rancidity.

I decided not to wait and cool down, and it worked. I was able to cut them into pieces nicely and put them back in the oven. Nice recipe, thank you.

Dough is very delicate to work with because it has no gluten to hold everything together tightly so it’s normal for dough to have crackes.
