In The Kitchen With Dinah began in the fall of 2007 as a personal chef meal service. The motto was, "home-cooked meals for busy families." Each week I prepared and delivered meals to my customers and eventually began catering.
As my kids grew older, I felt God leading me in another direction, and I began working at a local bank. I still felt like I wanted to share my love of cooking by helping people, especially young adults, learn to prepare home cooked meals themselves. After much more thought and prayer I mustered up enough courage to start a TH-cam channel. In July of 2021 we started writing and recording my theme song ( yes, that's me singing), and in August of 2021, we shot my first episode.
Don't mistake me for some fancy-schmancy chef, I'm not. I am a wife and mother who simply loves 'back to basics' recipes that taste good, reheat well, and can even be frozen. I have multiple 3-ring binders full of tried and true recipes I can't wait to share with you!

EASY Almond Flour Shortbread Cookies | Gluten Free, Egg Free, Grain-free
Sweet and buttery, these almond flour shortbread cookies are the perfect companion for a cup of tea or coffee. They are also egg-free and grain free.
4 Tbsp soft butter
1/4 C sugar
1 tsp vanilla
2 Tbsp tapioca flour
1/8 tsp salt
1 C almond flour
In a mixing bowl, cream butter and sugar. Add vanilla, mix to combine. Add almond flour, salt and tapioca and mix until combined. Preheat oven to 350°. Line a cookie sheet with parchment. With a cookie scoop, place cookies on the parchment, and press them to about 1/4" thick using a juice glass or bottom of measuring cup. Wet the bottom of the glass just a bit and dip in sugar before pressing each cookie. You can use colored sugar if you like for a festive touch. Bake at 350° for 10-11 minutes. Cool and enjoy! Store in a ziplock bag. I like to store mine in the freezer and take one out when I want a treat.

A chewy molasses cookie is what I'm looking for. My mother made great molasses cookies that were chewy shortly after coming out of the oven, but after they thoroughly cooled were quite stiff and crunchy. I wanted the super large chewy ones we used to occasionally get from the bakery. I'm going to try your recipe. :)

I make spelt bread and I always use parchment paper in the pan so the bread doesn’t stick.
Did you not do a first rise? Only one rise?
I do not do 2 rises. I find it over proofs the dough. I have always done just one rise and have had great success.

what brand is the grinder, and where did you buy it?
I have a Nutrimill Classic. I bought it at a local kitchen shop many years ago. You can get them on Amazon or at Nutrimill.com. I don't have an affiliate link yet, but the price is kinda the same. They do run an occasional special. Nutrimill did just come out with a new/less expensive model the Impact Grain Mill - its about $100 less.

Just stumbled upon this recipe. Can you use hard white for this recipe?
I would use a mix of hard white and soft white to get more of an all purpose flour. More soft white than hard white, the high gluten in the hard white will change the cookie, if you use all HW.
@@InTheKitchenWithDinah Hi Dinah, where I live I can get hard white, spelt, einkorn, emmer, rye and kamut. No soft wheat berries unfortunately. What grain would give the best results in baking pastry and cookies instead of soft wheat please?
Spelt should work. It may take more flour but see how the consistency is. Maybe do a test bake with 1 cookie and add more flour as needed
Can I use an egg instead of the tapioca?
I would recommend substituting arrowroot powder, or cornstarch. If you add eggs they are not shortbread cookies anymore.
