Hi! I'd like to share a tip: boil your flax seeds in water before using them. Flax seed decoction has the same binding effect as egg white (you'll see it when you boil the seeds, the water gets all gooey). And once boiled, flax seeds are easier to digest. Two birds with one stone!
Just had this recipe in my feed. If you grind your seeds first, you don't have to boil them. I've been making vegan chocolate chip cookies for yrs, using flax seeds.
It is a good idea to soak flaxseeds before consuming them as it helps improve digestion and nutrient absorption. Don't let the naysayers get you down! These are awesome recipes and very healthy. People who are concerned can swap out dried strawberries for the apricots (lower sugar fruit) and there are plenty of sugar free honey options out there. Personally, I do eat low sugar but I don't avoid it all together. Small amounts once in awhile are fine for most people and these cookies really fill that desire.
I can't wait to try them both. I don't have all the ingredients to make either one today, but making a list and will go to a health good store that has many of these nuts & seeds in their bulk dept, so will just buy what I need now, and that will cut down on cost and storage of larger quantities.There is also an Amish market with a large bulk dept about half hour away.
This recipe is more like an energy bar rather than a cookie. The amount of sweetness derived from the dried fruit and honey is minimal. Most cookie recipes call for a lot of sugars, granulated or brown. I absolutely will make them. Someone mentioned using figs and that is an excellent substitute for the fruit. instead of an egg, you can grind flaxseeds (or use flaxseed flour) and mix with water and set aside for 5 minutes (1 tbsp flaxseed flour + 3 tbsp water for 1 egg replacement). it'll thicken up to an eggwhite consistency. And instead of honey, I used maple syrup.

Have made these twice already! LOVE LOVE LOVE it! Not too sweet, sticks together, nice combo of ingredients, and sooooooo easy! The only changes I’ve experimented with are: substituted dried cherries (first batch) and dates (second batch) for the apricots; pignoli nuts when I didn’t have the pumpkin, sesame, and flax on hand; and, second batch I put the mixture in a chopper for a few pulses to break down some of the big nuts. We're never satisfied with the weather. Here in UK would love some sun. I will have a go but cut down a bit on the honey. My 2nd oven's glass shattered recently, so having to use little top one, non fan assisted. Should be interesting!!
I made these today and just munching on them 😊 I didn't have a forming ring like the one you used, so I just formed round cookies with my fingers and flattened them with a spoon. I’m developing a tea room but the twist is it’s healthy foods. These are perfect for the deserts. The first recipe I would only change the egg for a tablespoon of flaxseed soaked in about 3-4 tablespoons of water drain the water through a mess strainer and I use that for my egg instead of egg. I don’t eat eggs. But other than that thank you they look yummy.😋 ❤
I like 2 mix the honey with some molasses...but I will try adding soaked flaxseed. I don't use raw eggs. And dried cranz over the apricots. Alwyz looking 4 new recipes & twistz. Thnkx💙

Being one who can’t tolerate white sugar, (no, I’m not diabetic but it has an additive/processing method that literally makes me ill), I’m grateful for this recipe. Although many feel “a sugar is a sugar is a sugar”, honey is a better choice for me along with fruit. I will try this because I love the energy building properties. Thank you!
Those look delicious but you would have to leave out the dried apricots and the honey for them to be sugar-free. I have made similar with soaked dates. Mine had some coconut oil and sunflower kernel butter in them as well. Also I think I used coconut flakes. It was very delicious.

Made this yesterday but substituted some ingredients for ones I prefer eg hemp seed, chia, pecans, cranberries. Came out beautifully. Had one just now with chopped banana and vegan ice cream…delicious!
Sugar was rationed in England when I was a child, but dates were available and we had walnut trees nearby, so my mother made date and walnut cookies, which we loved.

Well I am definitely making these. Love that there's no sugar but also no flour. I will switch the walnuts for pecans as I can't eat them. I will also add cinnamon like I've read in other comments. I'm diabetic but the natural sweetness in fruits & even honey doesn't bother me really at all, not like sugar. Very excited to try them. Thanks much!
I am sorry to write this… But, even if these cookies look very delicious 😢, They are NOT healthy 🤷🏻♂️ They are full of sugar, just not industrial sugar, but industrial sugar is not better or worse than other sugars, just as honey and so on. It’s the amount of sugar that is unhealthy, not the kind of sugar. And nuts are full of fats. You're absolutely right. You really need to be properly informed about sugars. Honey, maple syrup, agave syrup, coconut sugar, etc... are all just sugars, sorry but that's the reality. So, be careful before saying anything in this video. 🤔The author of this video should do his homework. It’s about people’s health. I regret but do not give my blessing for this video. If you like it more creamy or as a change, you can simply mix cashews with natural sweatener (Honey or canadian marble sirup...) with banana, little water. Optional ist Coconut milk and vanilla flavour/cocoa and you already have a cream. Add any fruits on top if you like. It's healthy for the whole body, you get faster satisfied because it's complete and you will keep healthy teeth ;-)

Honey is sugar too.... there are no ' healthy' sugars. it all contains glucose and fructose whether it's cane, palm fruit sugar or any other. It's all sugar

Because as someone said sugar is sugar they are not made equal therefore they don’t affect the body the same one spikes glucose rapidly and the other one from fruits does it slowly and with soluble fiber. good health to all! I do agree that most honey in supermarkets are processed and not like the ones we buy from local harvesters so not as healthy. But it is okay. This person is making a very good looking recipe. Let’s focus on positive things and be grateful even if she still ingesting sweet things because we were meant to enjoy food unfortunately now a days is hard to eat healthy because contamination is even in the ground, air and water that produces our food. Let’s treat people the way we want to be treated. Sugar or no sugar it is our personal decision. Looks very yummy. I’m surprised that this actually all sticks together so well, especially the 2nd recipe. I would have expected it needs more eggs and perhaps some cornstarch. But I’m willing to learn, and definitely motivated to try these out. I bet there are infinitely more varieties of what one could throw together - different nuts, different grains, perhaps some dark chocolate or cacao powder added with honey could be great. I hear you! We are retired and the price of food has been a challenge. We buy in bulk at Costco. Their nuts are good quality, and we freeze them to keep them fresh for a year or more. (Though, many would argue that honey is a type sugar) I would say honey is much better for you than sugar cane sugar. I have a suggestion, perhaps agave syrup instead of honey (since it's better for diabetics). What do you think?
@@pmbbmp Maple syrup has a lower glycemic index than honey, which is lower than sugar. Given that understanding, it is healthier than sugar. Not to state that it is "healthy".
To those that commented after mine: the main difference between the "sugars" is Simple vs Complex. Simple:the body has less to break down to access the carbohydrate, so tends to store it; Complex: the body has to break down the other things before it accesses the carbohydrate, so has less tendency to store it. Honey on the other hand, I consider both simple and complex. Simple because it is already refined by nature (flowers and then bees) and complex because of it's microbial makeup. Which is why ancient Egyptians used it and today wound specialists use it to speed up the process of healing. *(Just my informed opinion) Wheat is another story---(food historians please add your input @townsends.

Honey is sugar. It is mostly fructose, some sucrose. I would cut honey in half and add Monkfruit extract instead which is 0 glycemic index. The egg white binder is very clever. This is a lovely cookie and I will make it. Thank you!
I agree totally, for me using Allulose or Stevia is best. I do Keto, lost all the extra weight and feel healthier at age 71 than ever before in my adult life 😀
The honey helps the cookies stick together. 1tablespoon between 6 cookies is less than 1/2 tsp per cookie. You could get that much sugar in a good sized tomato. Keep things in perspective!!!

It's pretty easy to get less refined honey these days, I always buy local honey. Eat local. Esp honey as this is supposed to help you if you have allergies. I don't see why not, I use 1T ground to 3 T water. I don't think the whole seed would effect the cookie as a soaked seed for the egg.

Being one who can’t tolerate white sugar, (no, I’m not diabetic but it has an additive/processing method that literally makes me ill), I’m grateful for this recipe. Although many feel “a sugar is a sugar is a sugar”, honey is a better choice for me along with fruit. I will try this because I love the energy building properties. Thank you!

Those look delicious but you would have to leave out the dried apricots and the honey for them to be sugar-free. I have made similar with soaked dates. Mine had some coconut oil and sunflower kernel butter in them as well. Also I think I used coconut flakes. It was very delicious.
How many soaked dates would you recommend for this recipe?
Dates have sugar as well. These cookies do not have processed sugar which is a win for me. I will definitely be making them in the future.

Sugar was rationed in England when I was a child, but dates were available and we had walnut trees nearby, so my mother made date and walnut cookies, which we loved.

Well I am definitely making these. Love that there's no sugar but also no flour. I will switch the walnuts for pecans as I can't eat them. I will also add cinnamon like I've read in other comments. I am sorry to write this… But, even if these cookies look very delicious 😢, They are NOT healthy 🤷🏻♂️ They are full of sugar, just not industrial sugar, but industrial sugar is not better or worse than other sugars, just as honey and so on. It’s the amount of sugar that is unhealthy, not the kind of sugar.
And nuts are full of fats. Nevertheless: They look VERY delicious!!!!! 🤤 They are just not healthy, but what really is nowadays 🤷🏻♂️🤪🤣
You're absolutely right. You really need to be properly informed about sugars. Honey, maple syrup, agave syrup, coconut sugar, etc... are all just sugars, sorry but that's the reality. So, be careful before saying anything in this video. 🤔The author of this video should do his homework. It’s about people’s health. I regret but do not give my blessing for this video. All dried, dehydrated fruits are filled with concentrated sugar. It's better to eat them "plain" that's it!

If you like it more creamy or as a change, you can simply mix cashews with natural sweatener (Honey or canadian marble sirup...) with banana, little water. Optional ist Coconut milk and vanilla flavour/cocoa and you already have a cream. Add any fruits on top if you like. It's healthy for the whole body, you get faster satisfied because it's complete and you will keep healthy teeth ;-)

Nice! As someone who does keto, I would make these without the apricot. The small amount of raw honey is something I could handle on my weekend keto which includes a few more healthy carbs. Thanks, I’ll be trying this one.

I do agree that most honey in supermarkets are processed and not like the ones we buy from local harvesters so not as healthy. But it is okay. This person is making a very good looking recipe. Let’s focus on positive things and be grateful even if she still ingesting sweet things because we were meant to enjoy food unfortunately now a days is hard to eat healthy because contamination is even in the ground, air and water that produces our food. Looks very yummy. I’m surprised that this actually all sticks together so well, especially the 2nd recipe. I would have expected it needs more eggs and perhaps some cornstarch. But I’m willing to learn, and definitely motivated to try these out. I bet there are infinitely more varieties of what one could throw together - different nuts, different grains, perhaps some dark chocolate or cacao powder added with honey could be great. I’m getting hungry. 😅

I hear you! We are retired and the price of food has been a challenge. We buy in bulk at Costco. Their nuts are good quality, and we freeze them to keep them fresh for a year or more. Sam's Club occasionally has their seasonal nuts reduced in price. We stock up when we find a deal! Blessings from Memphis, TN.

Hi Lena. Thank you for sharing this recipe. I have always wanted to make my own granola bars, but these look even better! (Though, many would argue that honey is a type sugar) I would say honey is much better for you than sugar cane sugar. I have a suggestion, perhaps agave syrup instead of honey (since it's better for diabetics). What do you think?
Maple syrup also lower calorie than honey, but maybe not thick enough to help bind.
Your body doesn't know the difference between cane sugar and honey. They are both sugar, period.
@@pmbbmp Maple syrup has a lower glycemic index than honey, which is lower than sugar. Given that understanding, it is healthier than sugar. Not to state that it is "healthy".
To those that commented after mine: the main difference between the "sugars" is Simple vs Complex. Simple:the body has less to break down to access the carbohydrate, so tends to store it; Complex: the body has to break down the other things before it accesses the carbohydrate, so has less tendency to store it. Honey on the other hand, I consider both simple and complex. Simple because it is already refined by nature (flowers and then bees) and complex because of it's microbial makeup. Which is why ancient Egyptians used it and today wound specialists use it to speed up the process of healing. *(Just my informed opinion) Wheat is another story---(food historians please add your input @townsends.

I'm sure what she meant is that she is not using processed sugar. There is a HUGE difference in health benefits between the sugars that come from fruit and honey than from unhealthy processed white sugar.

Thank you so very much for this recipe. I just made it and it came out great! Pieces of it fell off during the bake, but it didn’t fall apart as I ate it. It tasted so much better than I expected. I’ll be making this repeatedly for sure
Honey is sugar. It is mostly fructose, some sucrose. I would cut honey in half and add Monkfruit extract instead which is 0 glycemic index.
The egg white binder is very clever. This is a lovely cookie and I will make it. Thank you!

I agree totally, for me using Allulose or Stevia is best. I do Keto, lost all the extra weight and feel healthier at age 71 than ever before in my adult life 😀
The honey helps the cookies stick together. 1tablespoon between 6 cookies is less than 1/2 tsp per cookie.
You could get that much sugar in a good sized tomato.

It's pretty easy to get less refined honey these days, I always buy local honey. Eat local. Esp honey as this is supposed to help you if you have allergies. Honey has so many uses as well, and lasts forever.
