I mean if someone ripped you out of your plane of existence just to put you inside a staff for a really long time you'd eventually get angry and slowly go mad too (Not that anuleth was a nice guy to begin with)

Most likely due to the stress of fighting the Legion and later on finding out the fate of her younger sister Sylvanas now is a banshee queen and now serves the Horde, probably will weaken her resolve and the void breaks her which woyuld explain how she so easily and willing took the void in via the audio files.

So the shadow priests utilize a weapon made by the Old Gods against the Burning Legion only for it to betray them and act as the shadow priest as passage into our world and the blood shed of the demons here empowers the artifact to make way for the void lords and their pets.
Well you have to understand something: The entire planet (azeroth) is desperate we're desperate to put an end to the legion dangeous things and measures must be done in order to secure azeroth.. however this can backfire on us (and it will indeed as you say) however I feel this old god "Xal'atath" is only showing us the "path why of their choices and tell us to "remember" her when she eventually runs away (since we will lose our artifacts on the end of legion) for her services much like they (the voidlords) will remember the shadow priests carrying the dagger and doing everything that they have done to reach this point in time.. So the tl;dr: we're defeating one big evil but we dont know that we're releasing a bigger one (n'zoth and the voidlords) we're indeed the "fools" as this old god claims since our "little" war is meaningless and we should be prepared for there's big battles to come. You should listen her other whispers (7.2 and others) if you didnt by know, this is by far my most favourite artifact on legion due to the very interesting things she says.
In the beginning there were 5 old gods, C'thun, Yogg-Saron, Y'shaarj (or however you spell it), N'zoth and an unknown. The weapon is the last remaining of the unknown one which was killed by the other old gods.

Lots of these whispers are about Alleria, Turalyon and the new dungeon, some are from Antorus (the new raid) whilst others seem random
