Nearly 23 years ago I made my sister’s wedding cakes, chocolate almond, a flavor i can’t remember, and pound cake (I couldn’t stop the Italian cream cake from falling in my many tests) from Martha’s signature cookbook then. I bought equipment, tested, cried and ultimately froze the 12”, 10” and 8” layers and frosting for transporting to our moms freezer 2 hours away then to my hotel suite where I thawed everything and stayed up all night with my trusty stand mixer to frost and prepare them. I don’t remember getting the cakes to the venue (I didn’t stack them) but they were beautifully decorated with fresh flowers because I knew frosting decorations was the one thing beyond my skill and those were the best cakes I’ve ever made! My sister was so happy. Too bad the marriage didn’t last lol!
So grateful for this Martha. My only attempt at making a Génoise Cake was not success to put it kindly. You are a great teacher; love your practical no-nonsense approach.🌞

Hello Martha, I love how you made those cakes and they look great and they look so good until I would not want to begin devouring them, but would since I am always so hungry and love cakes, and pies. While working for the state of Arkansas there was two ladies who use to make cakes and pies for me and I treated them with the finest in cooking utensils and necessary tools and one lady was still working for the state when I left and she was such a sweetheart and I miss them both.
Keep 'em coming! Love these full length shows. There's nothing else like Martha doing her thing in a kitchen. My father respects her because she is very wise with her tools. She takes impeccable care of her tools, and of course, everything! She definetely has taken very good care of herself. I have wanted to learn to bake the genoise for some time. Question. If you heat the eggs and sugar, can you use granulated? I ask because when I make SMBC, I heat egg whites with granulated sugar and the sugar melts entirely into the egg. BTW, love your way of torting the cake. I’ve learned how to trim the top, but not how to tort because it seems very scary.

@Mary Thacker That's a great question - we haven’t tested these recipes with monkfruit sugar or stevia but it’s definitely worth a try and the results will be delicious even if the cakes don’t look exactly the same. We'd recommend looking for a sweetener conversion chart on the web so that you can calculate the right amount to substitute for sugar. - Comments Moderator
Maybe in between the video clips, she has an assistant who does the frosting while off cam and then Martha would just right back in when the camera is on. Just some simple tricks in life that we don't mind since the entire video was edited beautifully. Not to mention those deeeelicious cakes!.

Maybe it is you. Everybody's body is unique'. There could be something causing your tastebuds to react negatively. Your doctor could have the solution.
Don't mean to judge the goddess Miss Martha... But instead of cutting the cake that way wouldn't it be easier to just divid the mixture into 4 different pans. Or if you don't have 4 pans divid the mixture into fourths and bake each one at a time.... Just a thought
I tried this recipe and unfortunately it was awful. 😟I’m sure it’s something I have done, but not sure what it was. The cake was very dense I did not rise at all and it tasted like cooked egg omelette. I was very disappointed because I watched a video to her three times to make sure I was prepared. I would love to know what I could have done differently

French pastry chefs usually moisten their genoise layers with a flavored syrup since they tend to be dry. It also improves overall flavor of the cake.

They are called peonies if you are looking for them! They're in season in May/June in the USA but a lot of silk ones are available.
