- Pork chop with white beans, rosemary, and apple
Ingredients
- 4 pork chops
- pork seasoning (1 tsp each salt, ground cumin, ground coriander seeds, smoked paprika, mustard powder, and a few grinds of black pepper)
- 1/4 head red cabbage, thinly sliced
- 1 red onion, thinly sliced
- 2 green apples, diced
- 1 large sprig of rosemary, finely chopped
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 500ml (approx. 2.1 cups) chicken stock
- salt and pepper, to taste
- 500g (2 cups) cooked white beans
- dill, for garnish
- optional: fennel pollen, for garnish
Method
1. To prepare the white beans and cabbage, heat the olive oil in a pan. Once hot, add the onions and sauté for 3 minutes.
2. Add the rosemary and season with salt.
3. Incorporate the cabbage, vinegar, and stock, seasoning again with salt and pepper. Simmer for 10 minutes.
4. Season the pork chops and grill over medium-high heat for 6-8 minutes on each side. Allow them to rest for 6 minutes after cooking.
5. Once the cabbage has simmered for 10 minutes, stir in the apples and white beans. Heat until the beans are warmed through.
6. To serve, plate some of the bean mixture, garnish with dill, and place a pork chop on top.
7. Drizzle with a splash of high-quality olive oil. Enjoy!

Yes on the mustard powder. I use a lot of Coleman’s in various recipes (it’s my secret ingredient here in the US, most aren’t familiar with it.)

had some sous vide pork chops the other day and they were so good, but i totally forgot about the apples i was gonna cook down with cinnamon and brown sugar to put on them. Especially green apples works well with the pork
Try tart cherries or some really good peaches. Simply delicious!!!
I cooked thick cut chops for the family one night and I used halved sweet/tart cherries on some, and sliced juicy peaches on the others, (farm fresh only, not canned). Seasoned the chops, got a nice sear on the outside, laid them in a baking dish over a bed of sliced onions, and covered them with a good smear of garlic confit and finally added the fruits on the top. Added a half cup of stock/white wine mix, and then backed until 138°F. Take out, cover, and let rest until IT hits 140°F. Served with butter + chives mashed potatoes and al dente asparagus and side salad.
A delicious feast all around!!!💚🤤💚🤠
@@ajrob2888try peach cherry bourbon bbq sauce with grilled pork. Its really good.
Before I lost my peach tree we always had way too many peaches that would get damaged. So since they were not pretty we cooked them down into peach candy or peach butter-one of my neighbors loves to smoke ribs and asked if I knew how to make peach bourbon bbq sauce lol. I just said not 100% but we will give it a go!
It took a bit of tweaking and adding but the peach/cherry/bourbon trio really works.
I made some sweet for over ice cream then added savory stuff like onions and garlic and smoke for bbq sauce.
