    Ingredients:
    4 pork chops, 8 oz. each
    Salt
    Pepper
    Grape seed oil
    2 tbsp. Dijon mustard
    1 small shallot, minced
    2 cloves garlic, minced
    2 oz. heavy cream
    3 oz. Calvados
    1 cup chicken stock
    For Yukon Gold Mashed Potatoes:
    1 ¾ lb. Yukon Gold potatoes peeled and cut into 1-inch cubes
    1 cup cream
    3 tbsp. unsalted butter, softened
    1/2 tsp. kosher salt
    1/2 tsp. Ground black pepper
    For Caramelized Apples:
    4 Granny Smith apples
    4 oz. butter
    1 oz. apple brandy
    4 oz. brown sugar
    1 clove
    1 cinnamon stick
    1-star anise
    For Braised Cabbage:
    ½ head red cabbage
    ½ red onion
    2 oz. apple cider vinegar
    4 oz. red wine
    1 tsp. mustard seeds
    1 tsp. caraway seeds
    1 tbsp. avocado oil
    Directions:
    00:00 Before cooking pork, let it reach room temperature to prevent dryness, and season twice for better flavor.
    00:27 Preheat a pan with olive oil, sear pork on both sides and render the fat by standing the pork chop up in the pan.
    00:55 Add butter to the pork after searing for a nut-brown flavor and to prevent drying.
    01:24 To make a sauce, drain the pork fat, then sauté garlic and shallots, and deglaze with Calvados and chicken stock.
    02:18 Incorporate cream and different mustards into the sauce for richness and flavor.
    02:32 Return the pork to the sauce and simmer to finish cooking while maintaining tenderness.
    02:47 For the garnish, caramelize Granny Smith apples with aromatics to complement the pork's flavor.
    03:14 Creating a caramel without stirring prevents crystallization; use it to glaze the apples.
    04:00 Serve the pork chop with braised cabbage and cream potatoes, topped with mustard sauce and garnished with caramelized apples.

    Used this method tonight (with a very slight variation for the sauce) - best pork chop I've ever cooked or eaten. My husband didn't even take a breath between bites lol. Ty for cooking lesson :).

    Tried this recipe tonight and ended up using beef stock instead of chicken broth and congac instead of apple Brandy. It still came out delicious and rich.

    I just wanted to say thank you for the amazing meal. I had just gotten my first cast iron skillet and made my dad several of your meals. I just wish I would have had this for his sister my aunt I took care of for 13 years she loved your show and personality. Being a person with a TBI it makes it all the more rewarding when there cooked so well. I wish I had a 10th of your talent that would be cool to cook like your shows and you do.

    Made this pork tonight (without any measurements) and it was fabulous! Pork is so lean these days that I find I always need a sauce. So good!

    Just made a variation of this recipe and it was delicious, I took the pork just over 140 so it rested out to about 145 - 150. I was worried I wouldn't like the mustard sauce very much and even though I forgot the butter at the end, it came out fantastic.

    A thick beautiful bone in pork chop just happened to be sitting in my refrigerator. BBQ? Reverse sear? Bake? I ran across this recipe and pulled out the ingredients and the trusty cast iron. Absolutely delicious. This turned a tasty pork chop and transformed it to a wonderful meal. Awesome. Thanks

    I made a variation of this recipe too and it was so delicious. I didn't add mustard to the gravy but it still was soooo good. I made the purple cabbage but I put sliced green apples in it, I sauteed the cabbage in balsamic vinegar and put the sliced green apples in with the cabbage.

    Tried this last night, very, very good. My chops were a bit thicker, and I for the timing just a bit off, the sauce went from incredible to too salty. Just a heads up!

    Agree about grilling the pork chop on it's side and searing the fat. That made a difference in the last pork chop that I grilled.

    Dang. This is delicious! My ingredients and outcome was similar as best I could with what I had on hand.
    Seared Pork. Beautiful.
    Creamed potatoes. Amazing.
    Cabbage. Brilliant.
    Apples on fire. Weeeeeeeeeeee.

    Personally i would add a small splash of applecidervinegar to the sauce. Cream sauces needs some acidity to make it less heavy. For those who don't have calvados, you can use cognac or whiskey(if it's flavor isn't smokey). You won't get the apple flavor, but it's still very nice. For those who don't wanna use alcohol at all. Applejuice and a splash of applecidervineggar to counter the sugar in the juice will work great.

    no wonder my pork lacks seasoning sometimes. gotta add twice if I don't add enough first time. I feel like I add alot and I barely taste any seasoning. I like to season with salt, garlic powder and a bit of cayenne pepper. I like the heat from the cayenne pepper on winter times

    Thank you for your reply, but I do not put wine or acidics in my cast iron pan. They discolor,
    so I wondered Gordon has some special cast iron. They look different from mine.

      It’s enameled cast iron. With this one you can put wine/acidics in. You’re right, not with regular cast iron.

      I put wine and alcohol in mine all the time… Never no problem… I guess if you’re putting wine in there and boiling it off alone it might be a problem but there’s all kinds of fat in the wine sauce with the pork fat, butter & cream so no problem... all I use is regular cast iron pans from Lodge, never used porcelain coated

      Always use cast iron to sear meats, especially pork chops or steaks.. not only will they give you the best sear because of how well they hold heat, but they can also be thrown into the oven if you’re cooking a big piece of meat and need to finish cooking the inside after a hard sear. 😉

      No... Just the regular cast iron pan you can get from Walmart… I recommend *Lodge* cast iron pans in USA
      -I see his brand of pan that he is using is “Boyle”... probably manufactured in the UK… But “Lodge” is the US brand

      I know you wrote this almost a year ago, but if you don't wanna use alcohol in this, applejuice and a small splash of applecidervinegar to counteract the sugar from the juice will work very well.

      Pork chop is pork loin perpendicular large hunks eg near the rib Ask your butcher. For Asians is same meat used for chinese cha siew except they use longitudinal strips of loin pork then slice it thin
