    Introduction -
    Chicken Bhuna is a “dry curry,” which means the masala clings onto the chicken (rather than the chicken swimming in sauce). Bhuna is a cooking method where you cook onions, tomatoes, and meat over high heat along with aromatic spices creating just a perfect dish. Bhuna chicken is meant to be a dry curry, and it does not need additional water because the meat cooks in its own juices. You will be surprised at how much liquid is in the pot once it’s done cooking. So try this recipe and let us know how you liked it.
    Amritsari Bhuna Chicken Ingredients -
    For Marination :
    750 gm Chicken
    1 tbsp Deggi Mirch Powder
    2 tbsp Pomegranate Powder
    ½ tsp Dried Fenugreek Leaves
    1 tsp Garlic Paste
    1 tsp Ginger Paste
    ½ cup Yogurt
    1 cup Onion (finely chopped)
    For Making The Curry :
    3 tbsp Oil
    1 inch Ginger (finely chopped)
    4 cloves Garlic (finely chopped)
    4 Green Chillies (slit)
    1 tbsp Deggi Mirch Powder
    ½ tsp Turmeric Powder
    1 tbsp Butter
    1 cup Tomato (finely chopped)
    Salt (as required)
    1 tbsp Coriander Seeds Powder
    ½ tsp Cumin Seeds Powder
    1 tsp Garam Masala Powder
    For Garnish :
    Fresh Cream
    Coriander Leaves (finely chopped)
    Ginger (julienne)
    Green Chillies (finely chopped)

    1:05 I added salt by mistake so my marination got sorta wet. I added some cornstarch now it's just a thick viscous slurry. Is it normal?

    I'd like to try it, but I can't get a pomegranate powder, only fresh pomegranate (seeds). Can I use those or can I replace the powder with something else? I have no idea how it tastes like. Thanks.

      If the seeds include some dried pomegranate pulp, just grind them, and it should work.

      @@eddieagha5851 thanks, those fresh seeds look like little red pearls, I think I'll dry them in the oven at ~60C, grind them and see what happens :) I wonder if the taste was much different if I used dried cranberries or sumac.

      If they look red they have the pulp. You shouldn't need to dry them. Just grind them in a mortar and pestle, or in something like a Bullet.

    I tried this recipe its very yummy but cooking took longer one and half hour but chiken didn't soften means still chewy not tender.finally I pressure cooked for one whistle.

    I see you used tomatoes in cast iron kadhai. Did it not react and taste metallic? I'm still a little reluctant to use tomatoes hence asked

      Deggi Mirch is a bit hotter than Kashmiri chilli powder (you could just use Kashmiri) - or just omit the green chilli's or use 1 and it will be mild enough for the kids ;)
