I have the tube pan with and without legs. I have found even with an ungreased tube pan when you turn the legged pan upside down and use the legs to support the pan, the loose bottom will start to fall down causing the cake to compress. I have found it better on both legged and unlegged pans to support the turned pan via the tube as it puts pressure on the tube which is attached to the loose bottom to keep it up against the bottom of the pan.

You could try using 2 - 9 inch (23cm) round cake pans. Don’t grease the pans, just line the bottoms of the pans with parchment paper. Bake until a toothpick inserted into the center comes out clean. Immediately invert onto paper towel lined wire racks until cooled.

Thank you for this wonderful recipe and tutorial. Are there any high altitude adjustments to consider? I live at 3600’ and usually need to add a couple Tablespoons add’l flour to keep cakes from sinking in the center. Thanks so much. Nancy Ikeler

Hi Stephanie 🙏🙏can you please make a chocolate version from this recipe because this cake has a unique texture that is soft and light and I have tried many recipes for a chocolate sponge and I didn't found same result as yours
I haven't seen a not nonstick bunt pan. But the shapes cut into a bunt pan would make it hard to unmold the cake. Because we are relying on the stick to cool the cake upside-down you don't grease the pan and trying to get a knife or spatula in all those angles would be difficult.

Does this HAVE to be made in a tube pan? Could it be made in an 8" or 9" layer cake pan or a springform pan?
Yes you need a tube pan for this recipe.

My aunt’s tube pan had feet. Circa 1950s. I lost it in one of many moves. I use a wine bottle to hang the cake.
