Alright, so I couldn't stop thinking about this cake since the recipe got posted and tried it out today. Few things I did different: - halved the recipe to make a small cake (my family doesn't like cake that much) - I did however use 1 whole egg for the cookies because I don't like throwing stuff away - used "grainy" cream cheese because my dad accidentally bought it instead of the normal one (again I didn't want to throw it away so I just used it lmao) Results: Making the cookie dough was nice and simple but my dough came out more liquidy (obv because I used 1 egg instead of a half one), so I had to bake the cookie cake base about 10mins more and the cookies about 5 mins more to get good colour. The cheesecake part was also easy to make. The cream cheese and white ganache mix was very liquidy so I was worried but folding the whipped cream and the chocolate chunks and crumpled cookies in thickened it up nicely. Assembled it and then let it rest for 2 hours until I added the dark chocolate ganache for the topping and let it rest for another 4 hours. So I just tried a piece, sadly my cake is not beautiful like yours :( but that's mostly because of the type of cream cheese. Anyway cake is VERY good the and the amount of chocolate ganache in top is just right! But the cake is very very rich, I could only eat the tiny piece I cut (think about half of a normal piece of cake). Also, the amount of sweetness is PERFECT. I usually cut sugar when I make new recipes but this was just right :D The cookie dough in itself is rather neutral in taste with just a hint of sweetness. Will def make this cake again someday, thanks for the recipe!!!
