    저는 마늘고추장을 여러번 담구어 먹고 있어요.손자들도 아주 잘 먹고 있어요. 감사, 감사 드리고 있죠.
    옛날 엄마가 담그던 그런 맛을 찾고 있었는데 정보 참 감사드립니다.
    요즘엔 물엿,조청 들을 넣고들 해서 달기만한데,
    저는 이렇게 자연스런 맛이 너무 좋습니다.

    옛날엔
    시골에 마루에 두고서 소금이 녹으면 또 소금을 넣고 저어주고 했담니다
    옛날 고추장이네요

    저도 당근에서 대용량 밥솥구매해서 이방법으로 호박 조청 만들었네요.3시간 넘게 달여주었죠.마늘 수확하고 흑마늘도 대용량으로 한번에 할수있어 유용하게 쓸수있어요.

      밤꿀은 향이 진해서 음식에는 적합하지 않습니다
      아카시아나 향이 진하지 않은 야생화꿀을 사용하시면 됩니다~~

    설 명절 제사지내고 3kg 담가야 겠네요.
    1kg 담근거 반을 시어머님 갔다 드렸더니~
    내 생전 이렇게 맛난 고추장 처음 먹어봤다고 칭찬받았어요.

    궁금점은 청국장 가루와 메주가루는 다른것인지요..고추장에 청국장 가루는 넣으면 안되는건지요?

      청국장으로 고추장 담그면 청국장냄새 때문에 맛이 없더라구요. 고추장이 실온에서 1년 정도 발효되어야 청국장 냄새 없어집니다.
      메주가루 대신 맛있는 된장으로 고추장 담그면 발효기간이 짧아 빨리 먹을 수 있습니다.

    꿀은 열에 가열하게 되면 좋은 영양이 파괴되어 좋지 않다고 알고 있는데 설탕을 넣어도 되나요?

      고두장이 저 맛있어요

      밖에서는 냉장고 와 달리 높은 온도에서 숙성하기 때문에 메주가루를 넉넉히 넣어 익히면 고추장이 더 깊은 맛이 납니다~~

    고추장용 고추가루는 씨를 같이 빻은건 안돼나요?
    고추장용으로 빻아 달랬더니
    씨를 안빼고 빻았더라구요.

      냉장고에 넣지 않아도 색은 변하지않습니다
      아마도 고추가루가 문제이지안나 십네요..~

    소나기 올때 뚜껑 열어놓으면 고추장 된장 간장 다 버립니다 큰일 납니다 몇년 장농사 버립니다
