First time commenting long time watcher. I’m Arab, and I have to say the best and I can’t emphasize it enough the best salad that goes well with kabobs or saffron rice or any Middle Eastern dish tbh is diced white onions and diced tomatoes olive oil salt pepper and lemon it’s simple but it’s transformative.

Iranians have the same except with red onion and with dried mint. To die for!!

I agree! We call it a Fala7i Salad in my home (or a Villager's Salad). But instead of black pepper, we add chopped Jalapeños. Very tasty. I converted friends onto this salad. They were shocked by its simplicity.

Laura you never seem to amaze and surprise me with your recipes… and the way you eat, makes me hungry for what you’re eating, even though I’m eating while I’m watching your videos hahahah. I’m Lebanese and this dish hit that spot for me … very similar to how I cook my meals too, but this looked so good in a pita and that salad…. I loved that idea for a lunch
    Thank you 🩶🌸

I don’t want to assume, but have you tried lowering the heat and/or increasing the distance between your grill and the food?
Also, you should generally wait until your coals are gray & glowing, versus black & flaming

These kabobs were delicious but were not dense enough to stay on the skewer so they ended up looking like elongated chicken meatballs! Not sure what I did wrong as I followed the recipe exactly. And I used metal skewers. Any ideas? The salad and tahini were perfect!

Zaatar. It’s Lebanese herb but we do not add it to the tahini sauce nor do we add yogurt. Tahini sauce is made with tahini, salt and lots of lemon juice along with some water to thin it out. And it is only served with meat shawarma and falafel, not chicken kabob.

The best kebabs I ever had was in Zubeyir Ocakbasi in Istanbul… especially their lamb kebabs…it was charred and smoky, so juicy for a kebab with bits of fat and they had some magic spice rub to it
