Agree with your uncle. NO wine with fish. There is something to be said about being in Italy in extreme heat while sitting down to a warm pasta dish. Enjoyed cooking with your uncle.
Please thank Uncle Tony for allowing us into his kitchen. Uncle Tony is passionate about his cooking. I bet it's delicious. I love his simple approach to the entire dish. Here in America we tend to overdo the ingredients and in the process hide so many of the subtle natural flavors of the tomatoes and sauce. My friends often asks me the questions, "What ingredient are in it, it's so delictious?" My answer is always the same, "LOVE." Uncle Tony cooks this way. He loves what he does and I bet with some crusty bread it is extraordinary. Here's your challenge Laura..."Teach us how to cook simply with love"....just like Uncle Tony.
I can’t imagine when Uncle Tony, Papa Sal and Nonna cooks at the same time.
There would probably be a bit of a „battle“ because everyone would like to have their own way. I, as an Italian, know these things well.
A proverb says… "Too many cooks spoil the broth". 😉
PS: we saw it right in this video between Laura and her uncle. She wanted to put some wine and her uncle said….“No way !“. :)
@@aris1956 we have different preferences but it would be amazing if it happened. We will see different ways or techniques between them.

This was golden! Loved every bit of this dish. I got some special head on shrimp from Lidl (I know, not the freshest, but I’m in Germany) and used spelt pasta for health reasons. Followed everything else to a tee. The squeezing of the heads is crucial!
