La "legendaria boloñesa " ( en realidad el nombre correcto es ragú) lleva 50% de carne de vaca,50% de carne de cerdo y queriendo un chorizo desmenuzado,no lleva ni albahaca ni ajo y se hace hervir por muchas horas a fuego muy lento. La base es justa,cebolla, zanahoria y apio.
I add 330 grams of Bacon with the fat to 1 kilogram of beef mince. I chop the bacon, onion and carrot very fine (usually i use the food processor). I saute the bacon, onion and carrot for a long time on medium heat in olive oil before I add the beef mince. I don't bother adding celery, as it doesn't do anything anyway. I add 1 cup red wine, a lot of garlic, dried basil and 1400 grams of tomato passata. Of course add salt and black pepper are optional.

It has got to simmer from 2 to 3 hours.

I never fry the soffrito and meat separately. And why remove the sprout? They actually have a name and are considered quite tasty.
