I am wondering if this is technically an end-grain cutting boards. It seems to me that the 1/8th inch strips are actually edge grain, not end grain. Therefore, in actual use, you have a lot of resilient end grain and less resilient edge grain. Am I thinking this through correctly?
Because he resawed the boards to 1/8 that 1/8 thickness was end grain. Then he cut them as strips wide enough for the depth of board. The issue you described has been an issue on some other creators boards, not here.

How long are you soaking the board in mineral oil?
Where do you get those bar clamps? They look like they work very well and have space underneath for cauls.
I got them from Menards, one of my local hardware stores. They do work pretty well!

tip: put either packing tape or "tuck tape" on your cauls and glue will not stick to them. 😀
