There is already lacquer thinner in the “wood bowl finish”. It is food safe as long as it is fully cured (I always wait a month). It used to be called “Salad Bowl Finish” and was meant for food situations. As far as Gorilla glue… working time is advertised at 10-15 minutes. I can’t speak for food safe, however the glue lines are so tight that in my opinion it’s not a factor.

How is the Gorilla glue for open time? And is it a food-safe product? What about the lacquer thinner in the board finish? Is that an issue?
