    I've been making crepe cannelloni for decades. No one has ever suspected they weren't made with pasta sheets.

    Thank you Chef John, for thinking about us single people. It's nice when a recipe is tailor made for 1 serving. But it's also nice when I can make a batch, freeze it, and forget about cooking for the remainder of the week. 😊 It's nice to have the choice.

      I just buy fresh lasagna sheets and cut them as needed. Never had any problem making small lasagnas. What am I missing? (Is it the leftover sheets of pasta? I just cut them into large strips and use them the next day as fresh pappardelle.)

      Lasagna freezes really well. At least the bechamel / bolognese version. Portion it up and becomes a great easy weeknight dinner.

    My mother makes crepe cannelloni filled chopped chicken breast, spinach and ricotta. Rolled and covered in her marinara sauce and bechamel. Baked. It was a Christmas Day tradition. Melt in your mouth. Pure Holiday Joy.

    I watch recipe clips on TH-cam pretty much every day. This channel is probably my favorite. The selection of food is so awesome. If I could change anything, I’d actually prefer if he said the exact amounts as he’s doing it so I don’t have to fish for the recipe but it’s fine.
    Hopefully he keeps making many more!!

    Used to date a woman whose family came from Sicily. She made a lot of crepes at once from that batter, put a meat filling in them, rolled them lengthwise, placed them with sauce, etc into a baking dish. She said her family called it Banana Ravioli (due to the shape). Incredibly delicious!

      We also roll them round a thin slice of ham, grated cheese and a chicory, cheesy béchamel sauce over then in the oven. Delicious if you like chicory, which BTW is called endive in France

    I use a glass 9x5 loaf pan. Also the Barilla no boil lasagna sheets. They fit perfectly! You can use your favorite meat sauce and fillings and cheese ingredients like Chef John suggested. Layer up to the top. Don’t worry about the spaces on the inside of pan. It will all fill out as it cooks. Let it stand for 15 minutes before microwaving. Yes! I microwave! Cover with plastic wrap and cook at medium power for about 30 minutes. Uncover and let sit on counter for 15 minutes. I make a Mexican version also, using retried beans and taco meat and Jalapeño Jack cheese! Makes 4 to 5 servings.

    I had to watch this!!! The pandemic shutdown has been very good for your creative juices, Chef John. And I just noticed that most cooking videos only show the cook eating one bite and raving over how good it is. But when you eat the whole thing, I’m more inclined to believe it’s very delicious.

    My favorite meal when I was wee little (4?) was "Crepes Romano" at a local restaurant. This reminds me of that. The subtle sweetness of the crepe is special.

    I made this with Bob's Red Mill 1 to 1 Baking Flour (Gluten Free). It made 5 pancakes which I stacked in a round earthenware dish, following the same style as Chef John. First time we've had lasagne since the wife went gluten free.
    It was absolutely Delicious !!! Lasagna's back on the menu boys.

    My Italian grandmother made a pasta dish that used crepes like these but rolled them up like a canneloni she called the "stracchi" (sp?) She made them for christmas eve every year and we devoured them. I always thought it was so much work but you made this look pretty doable. Thanks Chef John!

    Hummmm -- Substitute soft taco shell for the pancakes, -- picante sauce for the marinara, -- use Mexican three cheese instead of parmasean, -- and decorate with pico-de-gallo and you would have a "Mexican Lasagna!" BUT I still wish to try this one first!!!

      Actually it's a very old thing in certain regions of Italy. It's done that way for ages. They do classic lasagna with it and the roll'em up as cannelloni or manicotti.

    Top notch, Chef! Being from greek ascendance, I've sûre been having a ball at your Greek and Turkish grilled chicken stuff, and flat bread hints aso... So glad enthused Italians came up with their thumbs, for this legit "crêpe" shortcut ! Talk about making things more difficult, who'd boil up gallons for 3 lasagna sheets that'll f... well tare on you while trying to dry 'em up... You definitely have the "day-job" you deserve, and you even look like YOU might be enjooooooying it some, too !     Just made these. Pretty good! Pretty quick! You’re gonna laugh, my oven is broken so I cooked them in the air fryer!! Worked perfectly!

    John, you’re close, but after trying your recipe, I would suggest the following: I cut the pancakes in half to cover the layer. Also, I added a layer because there needs to be more pancake (something to bite into). Otherwise, you’re the man!

    My mother made these crepes to make her Manicotti rather than use the pasta tubes. The ricotta filling also had some egg and parsley mixed in as well. Delicious and loved by family and friends. I didn't know until I was in my twenties that there were pasta tubes used in Manicotti because mom's (actually grandma's and probably great grandma's) recipe included the "home made shells" (crepes).

    This is a really great recipe for when I'm low-carbing or don't have lasagna noodles in the house (but suspiciously have all the other lasagna ingredients) but the method would also work with real lasagna, just cook two or three of the noodles. Great idea, Chef John!

    My new obsession will be using crepes as noodles in any layered dish I can come up with. *Genius!* 😋 Update: mission accomplished! This was as close to a noodle that I have found in my 7 years of Paleo living, and I can't thank you enough for this video. I subbed in different flour, but the crepes came out perfect and I layered them with Paleo veggies and cheese, so WOW! I'm in Heaven 😋🍾😊

      We don't eat wheat flour so I am wondering if I should sub in almond flour or coconut flour? Any ideas?

      @@julieguenther4422 I used Cassava Flour, and it worked PERFECTLY! Sorry it took me a while to see this comment. I used this "noodle" to make an incredible lasagne with my own ingredients!

    I just made (for the first time) red bell pepper "lasagna" for 2 last night- meat sauce, ricotta, mozzarella, & parm. SOOO good & fits in my low carb routine. But I'm still watching this video! ;)

    My mother sort of "invented" such a recipe a couple of years ago and I am happy to see that other have been blessed by this idea of using pancakes for lasagna. The result is truly special!

    Hands down the best lasagna I’ve ever made and quite possibly ever had!!

    Okay, the nitty gritty…
    The “noodles” were incredibly easy to make. They took 5 minutes to mix up. 15 minutes to rest. 15 minutes to cook. I just used cooking spray instead of brushing olive oil because the first “noodle” seemed a little greasy. I don’t know why I’m putting quotes around noodle. They tasted just like noodles except way better because they weren’t so thick!
    I made my own ricotta from Chef John’s recipe. Delish! I haven’t perfected it yet, but if it’s a little dry, I just add some cream to it and yum!!
    The sauce. I used Rao’s Mariana for the first time. I’m convinced it had a great deal to do with the success of the recipe. Worth every penny. I decided I wanted to use jarred sauce and a couple reviews said Rao’s is the best; it is, hands down the best.
    The cheese. I remembered incorrectly and thought Chef John said to use provolone and that’s what I bought. It worked beautifully. Because I spent so much on the sauce I bought a $4 wedge of parm at Walmart and grated it. Not the real stuff (the shame) and it was still excellent.
    Putting it together.
    I didn’t have the beautiful ramekins (I’m getting some now) so I bought the smallest foil trays at Walmart. They worked perfectly.
    I felt like my noodles may have been a little thinner than Chef John’s so I did 4 layers with a little less ricotta between the layers. I did not drizzle with olive oil because I felt like the sauce had enough oil in it. I did spray the aluminum pans with cooking spray before I started.
    Cook time for 4 layers added about 5 extra minutes.
    The batter for the noodles made enough for 3 individual lasagnas so I made all 3 (used almost all of 1 recipe of poorly made ricotta and 2/3-3/4 of a 32oz jar of sauce).
    Once the lasagna had rested it came out of the aluminum pans nicely so we could have them on a plate.
    Sorry this is overly detailed but some people like that.

    Ive actually done something very similar with new cheddar and stale phulkas and thinly sliced eggplant. A wonderful way to upscale lunch leftovers for supper!

    Oh...you reminded me that my mother, who was from Bari Italy, used crepes to make manicotti. Of course all the deliciousness rests in the... gravy!

      It’s a chiffonade, not a julienne. 😉 and you are definitely worth it.

      There is something about how the aroma of basil pops after a chiffonade that makes it sooooo worth it.
