I've been using a pasta shape called Campanelle for my lasagna soup, it's just so much easier than fussy cutting the regular strips. Definitely going to try the oven toasted version with Campanelle though, sounds decadent. These sorts of chunky pasta shapes like radiatore are my favorites.

@@foodwisheshowdy Chef John...been a fan of yours for several years now. This italian soup hit home here because my wife is 100% Italian and i dont do much cooking here. But you made it look easy because you are fantastic at what you do. I did not cheat on the noodles...and cooked and then baked them and then added to soup towards the end. That is absolutely the way to do it. I got my wifes stamp of approval too. Ha! I did use her homemade gravy (marinara) and chicken stock. I added a little extra water to keep it a little more soupy. But just wanted to let u know it turned out delish...thanks for the inspiration, sir! 😊
For me, there is only one casserole that I enjoy even more than lasagna, and that is moussaka. You know where I'm going with this, I would love to see Chef John's take on moussaka soup. Recipes exist, but I think it can be made to be closer to the oven dish. One twist that I would apply would be to be to fry the potatoes crispy and use those as a garnish.
My favorite "baked item as a soup" is stuffed cabbage / cabbage roll soup. Oh my, it's good, and a fraction of the work.
If there is Lasagna Soup......there must be Moussaka Soup....Make it So!
Reminds me of tortilla soup. Deep fry the tortilla pieces until crispy before dumping into the soup to just get all soggy. But it gives them a whole new character.

This looks marvelous. Since I learned about the "Three ingredient" tomato sauce about 3-4 years ago, I have not purchased sauce in a jar or can with one exception. I always keep one of those tiny cans of sauce for when I just want to make a small pizza. It takes about an hour to make, and it lasts me a couple to three meals. My go to canned tomatoes are Red Gold, whole tomatoes, or Cento Certified San Marzano when I am feeling rich. They never disappoint. And both are available at Walmart.

I made Kitchen Sanctuary's Lasagne Soup a month or so ago but this really kicks it up a notch! The frilly-edge pasta just gives it that extra pizzazz, or lazzagzz.

Mouth watering - it looks so delicious! I can’t wait to try this! Thank you! I never heard of lasagna soup before your teaser post. I rarely make lasagna because it is so labor-intensive & time consuming. I prefer creating 5 star soups, so this is a great alternative for me. I love veggies, so I may consider adding mushrooms & various squashes to it.😋

Just made this and had a heaping serving. This is absolutely delicious. The crunchy pasta, the cheese and eating it like a soup with a spoon is brilliant. This dish is certainly being added to my other Chef John dishes that we make in a regular basis. I highly recommend. He’s absolutely correct, you have to use the real parmigiana reggiano and the good mozzarella not the prepackaged in a bag cheese. The expensive stuff. It make a huge difference.
I’ve made this before and was thinking about making it again. The toasting of the noodles is intriguing. Going to try that next time!

The type of personal who makes their own marinara sauce also makes their own bolognese and does the full lasagna. The type of person who does a soup lasagna definitely buys the marinara at the store. You know us so well Chef John.

Made this; it was great and a thumbs up around the table. Broke my rule of following a recipe the first time and only making changes later, because I had some spinach and mushrooms that were starting to get close to their end of freshness so I added that. Will add them again the next time as well...
So because I had already done that, tuned it further by adding Italian Seasoning spice mix to the soup while simmering during taste testing spices.
And the cheese mixture ran out before the lasagna soup did, so other cheese lovers might want to increase the cheese mixture by half.
Hard to find tomato paste in tubes around here; I open one of the small cans instead, take out what I need for what I'm cooking, cover the remainder in the can with a piece of cellophane wrap pushed down on top of the remaining paste to protect it from the air, then store the can in the freezer. When I need paste again, a little bit of time with hot water running on the can, and then scoop out the amount of softened paste you need.
This one goes in the rotation, except I'll probably simplify by using bow-tie pasta from this point forward. Thank you, Chef John.

I love that idea of toasting the noodles, but I would cheese so you could have the crispy cheese like lasagna 😊
The only way I usually make lasagna soup is by actually making a full thin lasagna in a pan. And then I chill it or even freeze. And then I cut it in cubes, and I make a tomato soup with marinara, and then I put the little cubes into the lasagna soup, just heated through and serve . 😘

You could give it the onion soup treatment: ladle into heat proof bowls, float some garlic bread, top with cheese, then pop under a broiler until the cheese is brown and bubbly.
I’m totally going to make this. Only I’m going to add homemade garlic butter croutons to it at the end as well. 🤘🏻 I love lasagna, but hate the long process of making it, being I’m disabled & it’s painful to stand for long periods. So I make a lot of homemade soups. My son says I’m really good at making homemade soups that he calls me the soup queen & thinks canned soups are disgusting. I’m always inventing & coming up with good soups, but never thought of lasagna soup. I can get my lasagna fix without as much work. Thank you🤘🏻 you rock🤘🏻 and I’m going to cook this tomorrow 😋

We saute the varmecilli before adding to soups it helps it holding its shape and give so much flavor
I've never heard of this, or thought of this, but since I can't eat lasagna anymore due to achalasia, this might be the next best thing! I will need a smaller, less dense soup, but I loveEVERYTHING about this🙌😍 Toasted noodles. Marinara tomato soup base. Ricotta. Yumm!!
Chef John, I would love a recipe for Italian sausage. It's not a thing at all in the UK but is a standard in the US. An approximation of herbs and spices used so I can add some to some pork mince or sauages would be greatly appreciated!

Great request! It's basically salt, pepper, and fennel seed, maybe also some garlic, but I don't know the proportions. Some people don't like the fennel seed, and buy sausages without, but I think (having grown up in the NY area with an abundance of Italian sausages) that it's an important part of the flavor profile.
I'd love to see Chef John give a recipe for typical English sausages, too. I made bangers and mash once, with fennel-less Italian sausage, but I'm sure it wasn't the same.

So I saw this yesterday. I had started a pot of homemade lasagna sauce the day before. (Go ahead, make jokes. Wasn't gonna store it. Was gonna use it!)
I watched with amusement until you got to the noodles. Then I realized that you are some kind of noodle savant and what my family and I were having for dinner today.
