I remember as a kid in korea eating this every winter, almost everyday on the street. On my way back from school. And sometimes I didn't have money and the lady who makes it would give it to me for free because she didn't want to see me hungry. Warm cozy memory of winter.

what i love about about chef john is how he varies his recipes, he doesnt exclusively cook american/italian food with a sprinkle of cayenne, he actually reseaches and features other kinds of cuisine. I remember when he posted paraguayan flatbread (mbeju) from my home country i felt so validated and seen, i never saw my fav youtubers ever mention my country, and now with this korean recipe is so nice to see how much he recommends and loves it

Not exactly. The flour to sugar ratio is 10:1. There's more in there than just those 2 ingredients.
And that was in Ireland. In America, most of their bread has 3 grams sugar per 6 inch.
That's 12 calories. But they have to list it because they added it. Just because they added it, doesn't mean you're going to eat it.
A small amount of sugar is necessary to feed the yeast, otherwise it takes a long damn time to make bread.
Big companies don't just make a recipe and start selling it. They have groups of people from every area they sell in taste testing.
Apparently in Ireland they like their sandwich bread sweeter than we do.
And you can't really fault a company for selling people what they want.

Probably because she doesn't want you to get fat as hell. This thing has like 1500 calories, all from fat and carbs. Korea was relatively a poor country until the 90s so we sought out calorie dense food as much as possible at the lowest cost possible. This was one of the result as was the instant ramen and other flour based foods. Now that Korea is one of the richest countries in the world, food like this is actually contributing to an obesity problem. Enjoy it friend, but only like once a month. LOL.
