@Wylie Tharp those short wheel base trucks are cool ,, i have one i made a pickup truck out of ,,mine is a whole lot older , mine was originally a Shag truck used at a truck terminal ,,the truck is a 1976 ford COE , it's shorter than a pickup truck and mine is actually one of the last GAS powered big trucks built ,,i added an 8ft pickup box from the correct model year ford truck and use it to pull my campers even being a class 8 truck it's shorter than a conventional pickup truck , a standard pickup with an 8ft box is 17 feet long ,,mine just 14feet it weighs 8500 pounds about the same as a 4 door 1 ton truck
that's where the comparison stops because i can put 8000 pounds in the box and not come close to being overweight
i can pull 30,000 pounds without exceeding the trucks capability let alone it's limits
same fuel mileage as an average gas powered pickup too , i average 18 on the highway and 13 in town when not towing and about 8 -10 when towing 15000 pounds
the engine i updated , it originally had a 429 FE big block ford, i replaced that with a 1989 model 460 V8 from a motorhome ,it's EFI and also turbocharged , producing 400HP and 560 LB/Ft torque ,,the transmission is a 5 speed eaton side shift and is equipped with a gear vendors OD unit ,,with dual 75 gal gas tanks when i decide to go camping not much gets in my way ,,plus it's easier to park , and shorter than a pickup truck with a better turning radius

Out of all the trucks you looked at, the PeterBuilt 362 15 Speed Caterpillar 3406 would be a nice addition to your fleet. It's a beautiful looking truck. Would need the least amount of money and work to get it back on the road. In the new workshop. Why not fit a mezzanine floor at the bottom half for storing all the parts and stuff. And under neath you would have bays for stand drills, lathes and milling machines.

The best question is will the Peterbilt or Freightliner compliment and go with the International? The Peterbilt looks like a hauler that will work hard all day on the highways with the extra gears & potentially working A/C, but she does look the rougher of the two (both in body & interior). The Freighliners body looks easier to get ready for a photoshoot next to the International, and has the extended frame you were previously looking for and a PTO. It's interior also looks like it needs less work, not perfect but further along to be back on the job.
The CAT is the same sort of animal as the Cummins, so you already know what to do to get where you want with it. The Detroit, will give you a different feeling giving a greater difference to the International, more challenges but also greater chance to learn something new.
But since one of these will be a worker without much contend done on it once she's up and running, the other question is will it turn into a later project or be sold so as no to take up too much space?
As a later project if you get the Freightliner, see if you can retrofit the swing out stairs of the Argosy. No real point to this other than making it really easy to get in or out.

I think you should totally get the freightliner cabover because it’s a good start

Runs pretty good but I would walk away buddy. If your planning on using it I would recommend a double screw so you can carry more weight.

I grew up in South Florida and a good freind of my Fathers who was a JackmOf All Trades and could build / Fabricate almost anything under the Sun and was also a great big Man in size and strength. had at one time in his life became a Repo Man that specialized in Repo of Mobile Homes he had a lot of crazy stories of people running out of their house with guns threatening to kill him apparently he had constructed a hydraulically operated hitch on his truck that allowed him to quickly and quietly adjust his hitch to snatch one really fast i was surprised because he never carried his own Firearm during those years but preferred to reason with the people this Man was one of the Strongest people i’ve everkown in my life and his hands were Gigantic in size he truly had a gift for being capable of building some of the neatest and fastest Hot Rods of the day
