      Thank you! Haha, it was so tasty! My original keto puff pastry recipe and keto croissants actually did go viral on Pinterest years back. I think it was the first "real" keto pastry anyone had seen. I even had a popular blog copy my croissant recipe word for word.. It got more popular than my original recipe, lol. But they did give me credit once my followers started messaging me telling me someone stole it. So at least my name is somewhere in the post.😅

    I’m considering using the puff pastry for beef patties. But I don’t want to waste ingredients on the off chance it turns out wrong. Would I be able to halve the recipe as a test batch?

      Hi Lauren! You most definitely can cut it in half. The recipe is already half of an average puff pastry dough so you'll find it won't make that much (maybe enough for 2 servings). Hope that helps!

    Sorry honey, your "keto" flour is NOT keto. It has wheat flour.

      Hi Nancy! The flour is designed to be keto friendly by being in the NET carb range appropriate to maintain ketosis! Wheat flour itself is not an issue on a ketogenic diet (unless of course you have a gluten allergy or intolerance!) It's actually the amount of carbohydrates coming from the flour that makes a food not keto-friendly! The source of carbohydrates can also play an effect (simple carbohydrates will rain insulin more rapidly) but that's why we use wheat flour sparingly simply as a flavour enhancer! It only makes up a small portion of the flour (it makes up roughly 1.3 carbs of the 4 NET carbs that are in 1/4 cup of our flour). The rest of the flour is made-up of very low carbohydrate, high protein and high fiber ingredients that reduce any risk of insulin spike. Since we are a small family business, I did most glucose testing myself (I did many fasted tests with various keto baked goods). I found no significant raise in blood glucose 30min, 1 hour and 1 1/2 hours after consuming the baked items. Generally I saw blood glucose start to go back to base line after 1 hour. I also had a very awesome youtuber friend do some tests for me (he's quite well known for his glucose monitor/ketone tests). He also found the flour to not cause any blood glucose spike. Ultimately, it's the high fiber, high protein and low carb content of the flour that makes it keto-friendly. It's a benefit that the flour is then combined with a fat source to create baked goods, even further reducing any chance for insulin spike! Finally, I am very understanding of all versions of the ketogenic diet, which is why in our new blend we release this year, there is no longer any wheat flour (there is still vital wheat gluten - which is simply the protein extracted from wheat). But I also plan to release a gluten free blend for those with intolerances as well. (If you visit my main blog Mouthwatering Motivation, you'll see I write many of gluten free keto recipes! I try to be as inclusive as possible). This was a super long explanation, but I hope it helps explain the hard work and thought that went into designing this flour. I'm extremely passionate about the ketogenic diet and would never create a product I did not fully believe in! -Sam

      @@samanthabriden6310 - The ingredients of the flour are: vital wheat gluten, modified resistant tapioca starch and lupin flour as a THIRD ingredient, meaning this is basically wheat and tapioca strach... how are those KETO???? How is tapioca starch keto??? it has 0g of fiber...
