Can these panels be run under composite shingles using the proper flashing somehow? I can't find anything online.

The wall flashing should have a hem underneath, use it to cleat the z trim. Why put fasteners in a standing seam roof? Everything should be cleated and use rivets if you must

why do i even need the z trim? you cant even see it?

You don't need the "Z" trim if you like water inside your structure.
