Fixed this last night. While the duck couldn’t have been more tender, the sauce was out of this world. I was finally able to use my sous vide for something other than reheating bbq…LOL
Mate you could bathe in the stuff. 1. That duck will be come a regular, with or without the sauce. Try it as a “burger” with hoisin, mayo, cucumbers and spring onion. You’re welcome. 2. Forget Turkey for Christmas and Thanksgiving. Make literally a pile of this and pour the sauce over the top. Dude.
Oh …. And 3…. Give the ribs a go in sous vide. It’s set and forget. Do it with or without the initial smoke bath. I’ve switched to using baby back most of the time. Ep 42: Foolproof Pork Spare Ribs! My wife already told me the duck will be a regular. I could tell from the expression on your face when you tasted it that it was money. It was!! Ribs…nah…my KJ ribs are spot on so it’s one more reason to not do these sous vide. I tried steak that way 8 years ago and didn’t like the texture. I only do thick steaks so I reverse sear. My fave. Back to your duck…thank you!!
