    A question: hello Ling, one of the first chinese dishes I ever cooked was about 1976 from a german cooking book and there called Mo Ku Chi Pien. Quite similar in some points, but also different in some ways, like i.e. the meat vs veggie ratio is upside down 800 grams of bone-in meat vs 150g of mushrooms plus 150g of sweet peas. May that be another recipe or is just a variation of the same dish? They where also recommending Shao Shing wine for both marinade and sauce.

    I especially like the extra virgin olive oil in this dish. Quite unique for Chinese to use it at all in cooking. It is okay to use extra virgin olive oil with high heat for short quick cooking like this. Try it!

    very silly, even healthy food needs fats, preferably of the good kind like olive oil healthy doesn't mean always oiless, what is funny is that you say this is a lot of oil, I have seen a lot worse, ever seen Indians cook? I have seen many a cook use way much more oil ghee to cook no where near as much food.

    I love mushrooms and spring onions , and I really dislike carrots . I would have added the eggs and many other vegetables .

    Extra virgin olive oil for high heat cooking? I have always been taught that extra virgin olive oil burns easily and releases harmful substances when heated to high temperatures. Other than that the recipe looks fine and I will definitely use it, only replacing olive oil with some vegetable oil.

    It's kinda crazy how people use Olive oil for asian cooking. Olive oil does not tolerate high heat, and it leaves a bad aftertaste.
