I just used some store bought fajita mix....they are mostly fine. Generally, it's just salt and pepper for me. Cumin is nice. Honestly, if you just get salt, pepper and the cooking technique right, it will come out pretty darn good.
Youre right. It burns at a low temperature. Canola oil has a high viscosity and is good for frying. Olive oil goes is for foods that use a lower fire and towards the end

The honest answer is practice and repetition. There are signs you're looking for...when cooking like the edges of the chicken will turn white as they cook...that's about the time you want to flip. Then after a few minutes, the chicken will firm up to the touch...and with practice you can tell what a raw, perfectly cooked, and over cooked chicken feel like. Use a meat thermometer until you get the hang of it.

I forgot how long you said leave in oven and cooked mine for 20 minutes, 10 min each side and it was super juicy. The chicken breast that I had was larger than yours though. Hard to give a specific time as chicken varies in thickness. Very think, and just 3 - 4 minutes per side will do it. Thicker, then I do the same, and then put into the oven for another 3 - 4 minutes. Most important is to get a good sear on the outside,and learn to tell,with practice, when they are cooked through.
As someone who joined the army and wasn't allowed to cook in my Barracks, I learned everything on my own. I take the breast throw it down and keep going. I don't check the heat. Once the outside looks nice and cooked I cut open the middle and let it cook the middle until it's not raw anymore. From there I cook it even more then turn the heat off and let it simmer. Now paired with Insta Rice I have a delicious meal that I taught myself :)
i put it into a bowl and just go crazy with spices. I throw in a bit of everything and a bit of lemon juice at the end. Then i put aluminium foil on the bowl and put it into the freezer. I wait 2 hours and throw it into the pan. I really dont know if it is the right way to do it but it tastes ok and im a student so i dont give a f as long as its cheap :D

Thank you. I lost my Mum when I was 18 and have had to teach myself a lot of things because I don't have close family. I knew you have to be careful that chicken is cooked through properly so what I tend to do is cut chicken breast in half and fry them. However it would be nice to have them whole the way you do them. I hope you've got a video on how to make a nice steak. I use to put them under the grill and so much fat came off which is a good thing for your health but they don't taste as good as if you pan fry a steak. What's the best way to do a steak that makes it tasty but also healthy? If I had a child, I would teach them how to do chicken the way you have done it, how to cook steak and how to cook fish. I still don't know 100% how to make sure fish and prawns are cooked all the way through.

These are actually Boneless and Skinless...including "skinless" makes my video title longer than I like it ;-) But yes, I would use the same technique for either, with the additional point that if you are using skin on chicken, sear the skin side first

You do need to be careful of contamination. When I flipped the chicken it was still cooking...so the germs will be killed off. Once seared on all sides, make sure you wash tongs (or whatever else you have) so they don't touch cooked meat.
The goal is to get the chicken cooked through. If it's pounded out thin (half inch or so) chances are that will happen just on top of the stove. Thicker, imo, it's best to finish in the oven, after the top of the stove. While you could finish on top, you'll have flip several times to prevent over browning/burning the outside before the center is cooked.
+mike evans I reuse tin foil that I have used to line cookie sheets. I even put the pieces through the dishwasher and then keep all the pieces in a plastic bag that I brought produce home in. Then when I'm going to sauté, I use them to fashion a covering for the top of the stove, obviously leaving a circle for the burner. You can throw them away or run them through the dishwasher again if you plan to reuse them. You could even wash them by hand, but that would defeat the point of not having to clean up after sautéing! ;)

That's common question/issue. The answer is it depends. Did you let your pan get as hot as mine, or hotter? How thick is the chicken? Both of those determine how long on head side and if you need to finish in the oven. In my video it's about 3 - 4 minutes per side. But really you should look for the signs of when to turn...the edges turning/white getting cooked. The outside (pan side) nicely browned. Then after flipping for a few minutes, the firmness of the chicken.

Gordan Ramsey has an excellent video on how to cook a perfect steak in a pan, and it's extremely simple. You only need the steak, butter, thyme, and garlic, in a pan with some olive oil. The basic definition of breasts is its all fat and muscle tissue!!! there is no bone. I dunno I could be wrong but that was my understanding of breasts.
BlinkinFirefly usually, in my experience, the breasts comes with the bone, ppl sell boneless chicken breasts. when I cut up a whole chicken I cut out the breasts without bone. No one is wrong, just different experiences.

I had heard sautéing in olive oil is carcigenic once it reaches a certain temperature & puts off the steam/smoke, so I'd use a different oil.

+carlos alvarenga you need to make sure you have a frying pan that can also go into the oven.
low heat and covered in pan will not require an oven as the inside will cook thoroughly

400 degree oven. The real answer on time is "until it's down". That will vary depending on your oven, pan, and chicken. 3 - 7 minutes is the window.

I wish you would show the oven part of the process. Did you wrap the ceramic plate/bowl in foil or did you leave it open?

The goal is to get the chicken cooked through. If it's pounded out thin (half inch or so) chances are that will happen just on top of the stove. Thicker, imo, it's best to finish in the oven, after the top of the stove. While you could finish on top, you'll have flip several times to prevent over browning/burning the outside before the center is cooked.

+mike evans I reuse tin foil that I have used to line cookie sheets. I even put the pieces through the dishwasher and then keep all the pieces in a plastic bag that I brought produce home in. Then when I'm going to sauté, I use them to fashion a covering for the top of the stove, obviously leaving a circle for the burner. You can throw them away or run them through the dishwasher again if you plan to reuse them. You could even wash them by hand, but that would defeat the point of not having to clean up after sautéing! ;)

That's common question/issue. The answer is it depends. Did you let your pan get as hot as mine, or hotter? How thick is the chicken? Both of those determine how long on head side and if you need to finish in the oven. In my video it's about 3 - 4 minutes per side. But really you should look for the signs of when to turn...the edges turning/white getting cooked. The outside (pan side) nicely browned. Then after flipping for a few minutes, the firmness of the chicken.

Just start cooking small stuff and slowly but surely you'll learn. It's fun and beneficial. Something good to start with would be a steak. Gordan Ramsey has an excellent video on how to cook a perfect steak in a pan, and it's extremely simple. You only need the steak, butter, thyme, and garlic, in a pan with some olive oil. And it's delicious.

BlinkinFirefly usually, in my experience, the breasts comes with the bone, ppl sell boneless chicken breasts. when I cut up a whole chicken I cut out the breasts without bone. No one is wrong, just different experiences.
