Assuming it molted successfully, its organs would still eventually be crushed under its own weight without a supporting skeleton, or the new exoskeleton would just be too thin compared to the mass inside, and the internals would break the exoskeleton due to sheer weight. So yeah there's a hard limit on lobster size unfortunately.

This reminds me of a mystery/thriller novel I read years ago called Beneath The Mountain. An important part of the plot involves a theory the main protagonist develops about how a remnant population of prehistoric, giant sea scorpions called Jaekelopterus may have survived extinction by living in hidden freshwater lakes inside a mountain.

The Florida Reef is the third largest barrier reef on the planet. Also, I think specs was a weird horseshoe crab, though it’s possible that there is simply a gap in the fossil record like coelacanths have between the Jurassic and today
Yeah it's probably a hoax. But there are some uncomfortably large spiny lobsters out there. Not as large as Maine lobsters but still about half the size of the one reported. This actually brings to mind something from my childhood. Growing up my father would take my brother and I fishing out at Titusville. In the mid 90's we actually came across a huge dead spiney lobster. Neither my brother or I had ever seen one out in the wild before so it was a pretty big deal. We never knew how it got there as the Indian River Lagoon is a brackish estuary and so not at all the kind of habitat one would find spiney lobsters. My father took the head and had it at our house for a few years before it began disintegrating. I've only ever seen one other one of comparable size (a taxadermied 15lb specimen at the Blackbeard's Inn restaurant in New Smyrna). The carapace was over 8 inches long and had to be approaching 10lbs and 2ft when it was alive.
I recently just developed a random growing interest in cryptids and your channel is perfect for satiating it. I think it’d be cool if you check out and maybe do a review of a show that aired on Animal Planet in the early 2000s, called Lost Tapes. It was a horror found-footage series featuring cryptids and other legendary monsters that lasted for three seasons that looking back at it now, is so dark for younger audiences (if you can look past the terrible acting). It was a fascinating series. As for cryptid suggestions for future videos, Burrunjor, a supposed living theropod dinosaur in Australia and the “Devil Dragon” (living Megalania) seem like awesome choices for a video.

I don't know if you have a lot of experience diving, but the refraction of the water tends to distort the apparent sizes of things, so it doesn't even have to be an exaggeration, it might have just really looked that big to him.

wouldn't explain the eyes, horseshoe crabs don't have eyes, so probably an oversized lobster or hoax.
