Heard a way to expedite the roux is to put the flour onto a baking sheet and bake it 325° until as brown as you want it, then just add it to your broth with the rest of the ingredients to cook. Or, you can add the browned flour to a strip of diced bacon and cup of diced ham steak to get it more brown, then add that meat roux mixture to the rest of the ingredients and let it simmer.

@gtfoh1802 He had either a lil too much oil, or didn't use enough flour. Roux should almost be like a smooth light paste. Just keep stirring the roux until it gets chocolate brown like his. 👍

Great thing about gumbo is theirs several ways to cook one. All about the style you like. Love okra in mines. Plus its another thickener. No way is a wrong way. Keep it up good bother you be on it

If you don't want babysit your roux, and who does, you can put your flour in the oven for about 8-10 minutes and you'll have cut your cooking time in half

Louisiana Gumbo is Creole food. Cajuns are white Louisiana Creoles so sometimes gumbo is mistakingly called Cajun because of the popularity of Cajun identity. But because Creole encompasses all the native-born people in south Louisiana of any race that are of colonial Louisiana extraction, it’s better to call it Creole.

Because I’m from south Louisiana and here in south Louisiana, to be a Louisiana Creole you must be born in Louisiana, it’s part of what makes a Creole a Creole. Creole here means “non-indigenous native-born local person of any race, their culture and cuisine”. It’s a word we inherited from our colonial Louisiana ancestors that used it for its entire population (of any race) that was native-born and not an Amerindian or foreigner. Creole here especially means local, as in a local Louisianian, someone born here. Also here, Creole is not a particular race or ancestry or set of ancestries or some mix of races or ancestries. It’s basically all of the non-indigenous native-born people to Louisiana of any race, especially those of colonial Louisiana descent like myself. So there are white Creoles, mixed race Creoles, black Creoles and Filipino Creoles. White Creoles are those such as French Creoles, Acadian Creoles (Cajuns), Spanish Creoles (isleños and malagueños), and German Creoles for example, and there are mixed race Creoles like Creoles of Color (this group is mixed Euro/Afro, but they believe they are Euro/Afro/Amerind and some do have a few percent Amerind, but most don’t according to DNA testing as they are basically Euro/Afro mix), métis Creoles (mixed Euro/Amerind) and there are black Creoles such as African Creoles also known as Afro-Creoles and even Filipino Creoles (whose ancestors came to Louisiana aboard Spanish galleon ships in the 1700’s).
So again, I ask what do you mean by your family has a strong Creole bloodline?

The OP comment incorrectly called it “soul food”, so I informed that person of the proper name of the cuisine from which it comes and now the person is aware.
Calling a food “soul food” invokes race and/or ancestry as soul in this context is associated with black Americans due to use of the term by black Americans to denote association with black Americans. Well this term is unwisely applied to southern cuisine, the general cuisine found across of the south because southern cuisine is a multicultural cuisine with influences from white, black and Amerindian southerners rather than a black American cuisine. South Louisiana’s cuisine is the same three mixtures of influences in the cuisine, it’s just different types of whites, blacks and Amerindians than what has influenced southern cuisine. Both cuisines are multicultural cuisines rather than black American cuisines. Black Americans are like white Americans, they follow the cuisine of the region they are in, or in the special case of black Americans being of southern roots no matter where they live today, they follow southern cuisine (in which south Louisiana cuisine may or may not be a part of that).
I’m a Chef and Food Historian from south Louisiana and my only objective is to inform those that may be unaware of these types of things about food, especially that from south Louisiana where I’m from, as well as general southern cuisine.

If you can’t find gumbo file (fee-lay) in your area, like me for nearly 20 years living in VA, you can also use frozen chopped okra. I always put mine in about 3-5 minutes before the gumbo was ready to serve. Nothing worse than slimy okra. 😖

Pro tip, dont brown the chicken. Thow it in the gumbo raw and cook for 2 hours in the gumbo. It makes it 10 times more tender and flavoring. Looks great for not being from here, though. This is usually the dish outsiders obliterate.

Looks fantastic but never shove things off the board with the blade side of the knife, always use the back, blunt side to keep the blade sharp as long as possible
step you may want to take to improve your gumbo. Chicken skins to make the oil. You can also use the top scrapping on making stock instead of a netural oil.
