I made this recipe the other night and it was soooo good! It was my first time trying and making albondigas. For the tomato sauce, I used a can of el pato tomato sauce (yellow can with a duck on it,) and honestly half a can or 3/4 of the can would be perfect with it. The meatballs were delicious and the veggies with it were so good too! Everyone should try this recipe 😋
Made this with just meatballs and potatoes because that’s all I had on hand but still soo good and satisfying!! My grandma would be so proud if she were to see my making albondigas ❤️ :)
My friend Marcela, whose mom is from Michuacan, taught me to use dried yerba buena instead of cilantro. Also she taught me a homemade tomato sauce that the meatballs simmer in instead of a soup liquid. So good!!!

I watch other cooking/recipe type channels but I have to say, I've only ever watched, and followed instruction, on any of yours. I've been cooking a long time but you can always learn something new. Talk about inspiration. After watching the video I went to the kitchen to prepare this (which I never do that, I usually save recipes and never make them)😂 As you suggested I adjusted to my needs. I used sweet potatoes (that’s what I had) and because I’m vegan I substituted tempeh and mushrooms for the meatballs. And of course seasoned to my taste. I will let it simmer another 10-15 minute but my taste taste said this is a win!!! Thanks, bless you!!!!

He ,s the 3rd Eldest child of 16 kids. And he is the only one that can cook out of all his siblings. Our kids and myself are so Lucky!! He does all the cooking, but i do cook at times when he,s not in the kitchen LOL. and he makes lots of dishes that you make. So delicious. His youngest Brother tried his hand at this soup but his didnt come out like Manuels he said. We said just keep trying you,ll get it.Thankyou! Great recipe! Had to boil & use 4 tomatoes, 2 garlic cloves & half an onion for the tomatoe base if you dont have canned on deck. Another tasty recipe!! THANK YOU FOR GETTING ANOTHER DELICIOUS MEAL ON MY TABLE FOR DINNER 😋🔥🥰 ***Note for leftover caldo- I added more water, tomatoe & chicken bouillon, pepper, garlic salt to the caldo; chopped up red potatoes & oil fried onions + elbow macaroni - boiled on low for 20-25 minutes [served with cream cheese on tortilla & spicy green salsa 😋] Yummy next day brunch while im at home with my little one🥰 Happy Holidays Gochujang Mama🎉
It's perfect for this time of year in Arizona it's been a the low 30's in the morning and about 60 during the day. I know a lot of people don't believe that it gets cold but it does in the High Desert like Flag Staff it's get's really cold I even put two quilts on our bed and I sleep in Sox's.... 😂😂😂😂😂

Cooked rice works to, but it might get mushy before the meat has a chance to cook. Maybe brown your meatballs well then add veggies to saute then liquid to boil. That will cut down on the simner/boil time. 😁
Richard Coe traditionally you do use cooked rice but you only cook it semi soft so that the rest of the rice cooks while in the meatball so don't put fully cooked rice. Most Mexicans cook their rice for about only 7 minutes. When you add uncooked rice like sh did the rice doesn't fully cook and you'll find pieces of hard rice. You're also supposed to add chopped mint or spearmint to the ground beef or pork.

Do you think frozen meatballs would work? I have bad arthritis in my hands so it's difficult to make them homemade.
