A tip I have been seeing watching my cooking videos is when you need very fine onions, like to add to ground beef into meatballs or meatloaf, instead of using a knife, just grate the onion with a grater directly into your meat mix.

Yummy. I made this recipe last night. I grew up eating Albondigas but we never browned the meatballs first and my Mom used alot of rice in her recipe. She didn't use many veggies in this soup. I happen to be a veggie lover so this recipe was an amazing change for me. My husband and daughter loved it and we're eating leftovers for days now. LOL Thank you for your recipe.

OMG this looks so good. The spices are really close to what I use for pollo asada, my mouth is watering just watching this video. I love soup like this because if I have some small amounts of leftovers you can just toss them in. Thanks so much for another great recipe. I can put together some good whole dinners and sides thanks to your videos and recipes. I think this soup will go so well with your Mexican rice!

If it only takes 10 minutes to cook the meatballs, why do you put them in first before the vegi’s that take 15-20 minutes? Does it make them tender to simmer for so long?
My favorite secret recipe is a pack of Top Ramen noodles with extra ginger sesame seed oil. I like to top it off with a handful of Doritos nacho flavored chips and a candied mint.
I buy several stalk if celery chop n put in freezer ziplocks n throw in my freezer I have celery anytime needed all year. when it's cheap I buy more n do same I even do onions n carrots

When I make Italian meat balls, I brown them in the oven so they brown evenly and you don't have to turn them.
I dont like mint,can i sub with parsley or cilantro to keep that mex taste??
