    Hi Rachel I’m writing to thank you so much for this warm & lovely soup recipe. I was depressed in bed until 2:00PM my best friend just passed and she use to make it. When I watched you make it I got out of bed made a shopping list headed to the store came home and made it and it really lifted my Spirits!!! 🥰

    I made this dish for dinner tonight. I had to vary it slightly, as I could not find the particular types of squash that you put in yours. I used frozen butternut squash chunks, and it was DELICIOUS anyway! I served it with a loaf of home-made bread, and it was a very satisfying meal. It was easy to make. 4 hours later, the house still smells amazing. Thanks, Rachel!

    Rachel, I want to thank you so much for your wonderful, step by step guidance on all your recipes. I am so excited to let you know that I finally brought myself to make your Albondigas recipe. They came out soooo delicious!! For 20 years I have been unable to remember my mom's recipe. I guess that I blocked it out since that was the last meal that I prepared for her before she passed. I came across your video about 6 months ago. The albondigas looked so yummy that my mouth watered, I was determined to eventually make them. It was so easy and so wonderful.     This lady really enjoys cooking. The care and gentle manner of handling the ingredients shows that. She goes the extra effort to put forth the best of the recipe no matter the time it takes,for instance, grinding her own spices for the soup. It really counts. Bravo dear lady.

    Rachel, every time I listen to you cook I get more excited to try your recipes. I've been cooking for almost 50 years myself well actually more than 50 but the passion for cooking never goes out of your heart and I love trying new recipes. But what I love the most about your channel is that you love cooking for "YOUR RON" , and you share little chips and advise if we don't have something or we don't want to use particular ingredients because it might be too spicy and I really appreciate things like that; I like how down to earth you are as if we are standing right there in your kitchen with you and the respect that you give us as you talk to us while you're cooking and I tell you I just think you're wonderful I'm so personable and charming, and I bet you're a very kind person to be around! I bet your holidays are filled with so much love and laughter and I think it be really cool if we could just get a hint of one of your holidays like a little mouse in the corner.     I made this for my family today. I used cauliflower instead of potatoes and zucchini for the squash because that is what I had on hand. It was absolutely delicious my husband and father loved it. I will definitely be making it again.

      That's the whole idea the recipe is for all of us to work with and truly enjoy, my feelings of Rachel's use of partially cooked rice in the meat balls fits perfectly because the rice will finish cooking in the soup pot, absorbing the flavor of all other fine ingredients. So good, so comforting...Thanks Sweetheart...

      I loooove cauliflower.
      It's a delicious and nutritious compliment and substitute for potatoes to the soup. I do the same.

    I know there are so many varieties of albondigas but my mothers was so similar. She always added surprises in the meat balls. My favorite was hardboiled eggs, raisins. and a little bit of serrano. The picante of the serrano and sweetness of the raisins made it an unusual surprise that went so well together.

    I like that you added your ingredients in the proper order for cooking time. Most other recipes add veggies way too early. Also cooking the rice halfway so you don't have to over cook the meatballs to get the rice done. I have done that after some trial and error in the past. It works. Thanks for sharing.

    I was introduced to a whole new world of tasty delights when I moved from New England to Arizona and my friends began taking me out to get Mexican food. Just like Chinese food, Mexican food recipes are regional. I started off with Sonoran style as it is full of flavor but not all the dishes are spicy hot. There are about 5 to 7 different culinary styles so I had to try them all and I have favorites in all of them. I slowly began to like the spicier peppers etc and also the taste of cumin which I had never had, and then of course Cilantro was a favorite in many soups, and other dishes. Cilantro lime baked chicken with seasoned rice or even Chile Relano with Mole sauce are good sides. I now am back on the eastern coast, not quite in the deep south but just a few miles south of Charlotte NC. I miss my Arizona Mexican food a bunch so I am glad to find this channel and start making things from scratch myself! Lots of work especially since I am the only one in the house that likes Mexican food. I generally go wild when the other two people I live with go away on short holiday and hobby trips. LOVE Albondigas soup and am anxious to find the two "squash" family veggies she uses in this recipe. Of course having freshly made authentic small flour or corn tortillas finishes the taste satisfaction of this great soup! I have successfully made myself hungry and eager to make this very soon. It is fall and cooler weather and a good sized pot of this will last me for lunch and or dinner most of the week and I won't get sick of it till it is gone!

    I remember having this soup growing up. My Mom put quite a bit more rice in the meatballs but that was her preference. I hope I can make it as good as both you and she did. I loved it and have fond memories of those days.

    This dish looks delicious bc you made it with so much love like all the other dishes you make.
    I think they will taste even better if you let them rest for at least an hour or two and even overnight. I never like to eat a dish right after cooking it, except for chicken or steak or a Chinese dish.
    I enjoy watching you cook Rachel.

    Amazing again! I love alboldigas soup with lots of vegetables. I've never made this soup but I order it when I go out.
    I watched this video and went to my Mexican store and got the ingredients to make this soup. I really like chayote and carrots and used large chunks of tomatoes. I really like heat in my soup so I put some canned Chipotle peppers.
    The soup came out so good. All the spices you use really make this soup delicious and my house smells yummy I didn't have any white rice so I used brown rice which gave a nice texture to the meatballs.
    My grandson's ate it up.

      due to dietary needs i substituted ground turkey. added a little bread crumbs to meatballs so they wouldn’t fall apart. once they were in soup they cooked wonderfully. my husband loved it. he’s from mexico n wants this to be part of our menu from now on

    My Yucatecan Maya friend taught me this recipe this week. It was so good! Especially since we’ve had cool weather. The only difference from your recipe is that we used ground pork (that was what was on hand) and that she boiled a couple of eggs. The egg whites went into the meat mixture. Then the egg yolks went into the center of the very large meatballs. Highly recommend this soup. Very comforting!

    Hi, plan to give this a try.
    You make all your dishes look delicious. When you taste them you always seem to really enjoy the flavors in your dish. You make my mouth water with your cooking. .
    Have you made albindigas with shrimp 🦐 and I believe mash potatoes or tiny cub potatoes, but not a lot of potato.
    My mother would make them for us growing up.
    My mother’s family were from Monterey and grandparents from Spain. I don’t know if this is a Spanish dish .
    I recall the albondias been a shrimp patty and frying them in very little oil. They were delicious.
    My sister and tried making them, didn’t really taste like them.
    Have you heard of this albondigas ?

      Does not sound good to me. May be a Spanish dish? There is such a Mexican dish of shrimp patties made sometimes with nopales and red chile sauce. This is a dish made during lent. I'm not crazy about them though.

    Love albondigas soup. My mom used to make it all the time for us growing up. I make it the same as she did she used halph ground pork and a little tomato sauce along with the egg and the rice. And its just as delicious. I enjoy watching your channel for the variation of ways you cook.

Grinding those ingredients made a Big difference in the flavor in my green chilie stew. I almost think I put Just a tad too much cumin, so I learned how much of each spice I need for this dish. But O my Goodness 😱 the flavor of this dish POPS. I’m SOOO GLAD I got me a molcajete. I cldnt Wait to make my first meal using my spices freshly ground.

    Caldo de albondigas is my favorite caldo, thank you for sharing your recipe. This is the second video of yours I've watched..This is exactly how I make mine but I have to add cabbage and celery to mine, now I can send this recipe to our daughters and friends that ask for it.     My favorite restaurant also adds cabbage to their albondigas soup. So yummy. I love this soup.

    Oh Rachel, the Albondigas Soup is DELICIOUS! It's a cold, snowy day so this was perfect. The meatballs are so tasty. The soup dish is a little time consuming, but well worth it. Yum!
