How to make CALDO DE POLLO CON ARROZ / MEXICAN STYLE CHICKEN SOUP WITH RICE ❤

- Soups or Sopas as we know them is something we group up with here in South Texas, such an inexpensive dish but so rich in flavor and nutrients, CALDO DE POLLO CON ARROZ was a dish my momma made on weekends when I was growing up, she changed it around by adding different vegetables and it was delicious any style. We ate our CALDO DE POLLO CON ARROZ with corn tortillas and a delicious salsa de molcajete, I hope you enjoy this recipe. ❤
INGREDIENTS
3 Chicken thighs (cut in half and skin off)
3 Chicken legs (with skin)
1 & 1/2 Tbls salt
3 large Roma tomatoes (diced)
1/2 medium/large chopped onion
Chopped cilantro
1 & 1/2 Tbsp tomato paste
1/2 tsp whole cumin
3/4 tsp peppercorns
3 large garlic cloves
1 Tbsp Chicken bouillon
3 medium carrots (diced)
2 medium potatoes (cut into 8 pieces)
1/2 sweet potato (cubed)
1 1/2 C. fresh corn off the cob
3/4 C. rice
Water (12 to 13 Cups, you decide)
• always be careful with bones.

Just woke up getting my coffee getting comfortable and watching this beautiful lady cook. Then later I will attempt to make this recipe.
Right now, I have my coffee and toast ready. I look forward to watching another wonderful tutorial. Honestly, I believe Rachel should have her own cooking channel !
Oh my soul! Thank you thank you for this! I have been living back in the states for a couple years now and lately I have really been missing the comforts I came to love in Hispanic communities. I was searching for true authentic recipes, found your video and tried this for the first time tonight. It turned out perfectly, to be honest it actually made me cry after the first bite I took, but in a good way. Thank for bringing me this comfort tonight. I added lime and avocado to my individual bowl and have been in heaven since then. Much gratitude!

Rachel , this the first time I’ve seen someone make Caldo de pollo the same way I learned from my mother. Browning the chicken pieces first before adding the water makes the Best Caldo. So many cooks just boil the chicken without this essential step. It just isn’t authentic without this step. I’m sitting watching this video wishing I had made some yesterday like I had planned because I wanted to have some after my medical procedure today. I wish I had made my Caldo for a faster recovery. ☺️ I can live on this soup as well as Caldo de Rez. I love them both but Pollo is my favorite.
I knew when I started watching your videos that you were a wonderful cook. .. but especially today watching you make Caldo de pollo. You’re teaching the world our Hispanic heritage wonderful recipes we all grew up with. My friends and family always tell me I should do You Tube cooking videos but..., not all of us have what it takes to follow thru with their dreams. Bless you , wishing you the best!

I just found your channel and I’m so glad I did! Because I’ve been wanting to make some of those childhood recipes that I remembered. And I decided for the first one I’d try your caldo de pollo con arroz. My family kept saying that smells good while I was cooking and it was good. This soup was amazing, made it last night WOW I did a few things different but basically followed your recipe. I agree with grinding the spices, makes the soup really pop! I remember my mother always doing that, so thank you for reminding me of the warm memory 💜
