I love caldo de albonigas and I especially love your version of it my dear Rachel. Love the addition of the chipotle to it plus the mint to the meatballs. Thank you so much for your comment my friend, it is absolutely delicious, the mint adds a refreshing flavor to the meat balsamic, but not overwhelming and the chipotle peppers with the adobo sauce can give it a good kick, if you don't want the heat you can leave it out and just add some of the adobo sauce for the Smokey flavor (still adds a pinch of heat). I hope you get to try it as soon as your kitchen is completed, I bet it's gonna be beautiful. Blessings! ❤️

I just finished cooking my four hour chicken with herbs and mixed variety potatoes soup. My male friend took two bowls and was stuffed. He said it was "gooood!". And it is filling. I forgot to record it. 😂 Maybe another time. But it really came out smashingly good. I had two bowls, too. Your caldo de albondigas looks great. I love her and her recipes. I Bought a Molcajete and have been trying to get it ready to use with the rice and salt, I’m loosing the battle my arms hurt so bad after using that tool to grind it up, then I leave it for a month and try to do more. I wish the was an easier way Rachel. I’m ready to start cooking.

🎉 THANK YOU! I made this for the first time. So delicious!! I used garbanzo beans & 8 fresh Campari tomatoes which I sautéed with/after the slightly glazed onions, bell pepper, carrots & garlic were tender. I did not use chayote or sweet potatoes, i’ll have to try that this time I just didn’t have any. Then I added some Mexican rice from yesterday, to the soup. My new favorite. 😍 Family loved it!

I made this today it was delicious my husband loved it. Adding mint to the meatballs and chipotle in the soup made such a great difference in the taste. I added some flower to the meatballs and some tomato paste to the soup. It was really tasty.

It is interesting how we all probably make Albondigas a little differently...but they all turn out muy delicioso!! I love Cilantro and never thought to put it in my meatballs nor did I know to cook the rice before mixing it into the meatballs. I had also had never sautéed the onions, spices and tomatoes together before adding the broth...so guess what I'm craving now!? Here in Central California we have been having major rain so Albondigas would really hit the spot now!! Love how organized you are and how clearly you give instructions. I would eat in your kitchen too as it is so clean!! Thank you for all your recipes and calm personality!!
Thank you so much, I did add the mint in my meatballs, I hope youvtry it. I partially cook the rice before adding it to my meatballs because it gets softer in the meatball and your meatballs will be so pillows soft. I always saute my onions first, because they sizzle in the oil and release their flavor along with the the other vegetables and spices my friend, let everything release their flavors gently and you won't have to wait till the next day for the best flavor. I hope you love it as much as we do. ❤️

Just made this tonight and it's out of this world! I used one whole jewel yam instead of the white potatoes. For stock, used one container of beef bone broth along with the regular beef broth. Used two lbs of hamburger so had about 24 meatballs. Had to use my largest stock pot! Upped the meatball herbs and spices. Used two tbsp jarred chipotle This made it a bit hot but my 10-yr old grandson loved it. I used Zucchini but next time will try the veg per recipe. Loved crushing the whole spices and seeds in mortar and pestle. It's a perfect winter soup. The mint in the meatballs was amazing! And the sweet yams were so good - no need for white potatoes unless you want them. Also dipped the corn tortilla - wow! My whole family loved it! Can't believe you had time to make tortillas while you made the soup. Thanks for your wonderful videos. You're not only a sweet and lovely person, you cook with love and your recipes are amazing. I once made your flour tortillas and they were also incredible.

Albongigas alway reminds me of my Mom....it was the most comforting feeling coming home to the smell of Moms cooking....haven't had Albondidas since her passing 12 yrs ago......I'm not a cook but your instructions were so good I think I can make this.....thanx

I made this for the first time. So delicious!!
I used garbanzo beans & 8 fresh Campari tomatoes which I sautéed with/after the slightly glazed onions, bell pepper, carrots & garlic were tender. I did not use chayote or sweet potatoes, i’ll have to try that this time I just didn’t have any. Then I added some Mexican rice from yesterday, to the soup.
My new favorite. 😍

I made this today it was delicious my husband loved it. Adding mint to the meatballs and chipotle in the soup made such a great difference in the taste. I added some flower to the meatballs and some tomato paste to the soup. It was really tasty.

It is interesting how we all probably make Albondigas a little differently...but they all turn out muy delicioso!! I love Cilantro and never thought to put it in my meatballs nor did I know to cook the rice before mixing it into the meatballs. I had also had never sautéed the onions, spices and tomatoes together before adding the broth...so guess what I'm craving now!? Here in Central California we have been having major rain so Albondigas would really hit the spot now!! Love how organized you are and how clearly you give instructions. I would eat in your kitchen too as it is so clean!! Thank you for all your recipes and calm personality!!
Thank you so much, I did add the mint in my meatballs, I hope youvtry it. I partially cook the rice before adding it to my meatballs because it gets softer in the meatball and your meatballs will be so pillows soft. I always saute my onions first, because they sizzle in the oil and release their flavor along with the the other vegetables and spices my friend, let everything release their flavors gently and you won't have to wait till the next day for the best flavor. I hope you love it as much as we do. ❤️

Oh my goodness, I just tasted this soup again before I serve it up, with warm tortilla's on the side, all of thee flavors compliment each other. I added red wine and a tbls. of brown sugar. Just made this tonight and it's out of this world! I used one whole jewel yam instead of the white potatoes. For stock, used one container of beef bone broth along with the regular beef broth. Used two lbs of hamburger so had about 24 meatballs. Had to use my largest stock pot! Upped the meatball herbs and spices. Used two tbsp jarred chipotle This made it a bit hot but my 10-yr old grandson loved it. I used Zucchini but next time will try the veg per recipe. Loved crushing the whole spices and seeds in mortar and pestle. It's a perfect winter soup. The mint in the meatballs was amazing! And the sweet yams were so good - no need for white potatoes unless you want them. Also dipped the corn tortilla - wow! My whole family loved it! Can't believe you had time to make tortillas while you made the soup. Thanks for your wonderful videos. You're not only a sweet and lovely person, you cook with love and your recipes are amazing. I once made your flour tortillas and they were also incredible.
