If memory serves, the addition of mustard to dishes/dressings/sauces that include mayonnaise is a historical one. In the past, mayo was made from scratch using raw egg yolks. The addition of mustard or mustard seeds (also vinegar) helped to stave off bacteria (namely salmonella) found in raw egg yolks. The mustard compound is called "allyl isothiocyanate". Today mayo is produced to be safe for longer storage. Potato salad with and without mustard is awesome. 🤪

I love mustard potato salad but for as long as I can remember ( I am 71) my family has used French dressing and mayo ( or miracle whip) in our potato salad. Eggs, onions, celery salt ( I am allergic to raw celery) and pickles or pickle relish. I think I would like to add the green olives to ours. Thanks for sharing!
Hi A!!! In all my 43 married years I have never cooked with MUSTARD. My dear husband ♡ hated it. I liked it on my hot dogs and bologna samis. I never tried potato salad with mustard in it.Altho my Love is now gone I still don't think I would put that or olives in any salad...Everyone has there own way of eating I suppose. Nice Video!!!...🦋
Looks good. I have three versions of tater salad I make. All different: a Southern style, a NY style, and a warm German bacon, vinegar & sugar version done in a skillet. Your recipe is very close to my Mama's Southern style tater salad. I haven't ever put olives green (or black), celery or green onion in mine though they sound like a good addition. I too put some yellow mustard in mine but only about a tsp but then I'm only making enough for 2 people these days not a crowd like when we were growing up and mama was making it for 5 people.

We all liked it much better so been making it that way almost 50 yrs now. I know the recipe by heart, so can write it down super fast now lol. Just shared it again on Mothers Day and wrote out 3 for the ones who will cook and not make me 😂😂😂

This is what I add...potato, egg, celery, green onion, chopped pickles, olives, seasoned salt, pepper, mayo and mustard. Our friend added the juice from the olives over the steamed potatoes, and it took it over the top! In a pinch, I substitute a little pickle juice in place of the olives if I don't have olives. Either way, delicious. Don't use too much though, or it will be soggy. Just drizzle over the potatoes once they are finished cooking.
That’s the way I make it minus olive and red pepper, which I want to try. I love potato salad, just about any way. Looks good and making me hungry. My husband doesn’t like it, so I seldom make it just for myself. Going to try your version this weekend. Thanks

I put about a tablespoon of white vinegar in the water when I make hard-boiled eggs. When I peel them I run them under cold water and the shells come off easily.
I can already see the hate coming.. But trust me.. These mayo purists always say why is your potato salad so good??? What is the trick.. MIRACLE WHIP Inevitably they say how they could never use Miracle Whip. 😅😅😅😅 also in tuna salad.❤
My family recipe uses diced sweet pickles instead of the relish, add a dash of the pickle juice from the jar or a dash of apple cider vinegar, and a dash of sugar. Also some celery seed and parsley as well. No olives or bell peppers. But increase the amount of diced onions and if available, use a red onion, if not the yellow onion will suffice. But one other big difference for my family is we have to use Miracle Whip instead of mayonnaise .
At the ripe ole age of 46 I can still hear my crotchty grouchy old grandma saying “chunky potatoes is just a sign of pure laziness. Plain and simple. Laziness”! She was a mean old lady and it upsets me that this is the one trait of hers that was passed onto me. HHah. But I will say that is the only one of hers that I do have. I always put mustard in my potato salad. However, I hate when the eggs are mushy. Mine are fully cooked but solid. Perfect potatoes recipe-cut into 1 inch squares, place in cold salted water. Bring to a boil. Cover and boil 10 minutes. Perfect potatoes every time. You may have to reduce the temperature of burner slightly so potatoes don’t boil over.
So I keep hearing from people that kewpie Mayo tastes the same as miracle- whip… I’d love to see someone, ie you, teehee, do a taste test to show how incorrect or possibly correct this theory is… are you interested or have you done it and your over it? Lol😅
Interesting. I have never tried Kewpie Mayo. I saw it at the Asian market and it was quite pricey and decided to pass. I am a Best Foods person. If Kewpie tastes like Miracle Whip, I am glad I passed. I can't stand Miracle Whip.
Kewpie tastes absolutely nothing like Miracle Whip. The authentic Japanese Kewpie (from Japan) has a distinct flavor because it contains MSG and it’s also richer because it contains more egg yolks than traditional mayo. Hope this helps😊

I never thought of using fresh bell peppers. I always just used Jarred pimentos.
