Light enough so that the work stays focused in the areas of emphasis (so for bicep curls in the arms and not in the shoulders, neck or where you have to move the rest of your body) and heavy enough so that the last 2-3 repetitions of the exercise are much more challenging. What I do is take a good guess the first time I move with the class. If I picked too heavy, I do fewer reps and next time lighten the weight. If I picked too light, next class I'll increase the weight. I've found the more you work with weights (and also one particular class) the more you'll know what weight of the dumbbells is good for you during each exercise.
