put your tomatoes in a paper bag to finish ripening thats what i do i take them off when they are pink or kinda red and let them finish in a bag works pretty well
Hey Asia! I’m just chilling and hanging out with you on this Friday evening. I wanted to share something I tried the other day and it worked very well. Rather than using baking trays to flash freeze, I laid a freezer bag flat on the counter, put several flat layer of blanched vegetables in with a sheet of parchment paper in between each layer until the freezer bag was full and I stacked the bags flat in the freezer but I don’t need to take them out. This gave me the benefit of flash freezing the pieces individually because they were laying flat in single layers, but the time savings of not needing to come back to do anything more. If I wanted to, I could go back and remove the sheets of parchment, but I am liking the way the veggies are fitting in the freezer laying flat.

Good morning, Asia! I've been trying my hand at canning as well. I've had some reservations and worries, but it turns out that botulism toxin is very easy to destroy by just boiling 5 to 10 minutes. It says so right in my All-American canner handbook, and I've done more research. Most spoilage has a noticeable foul smell and/or look: you can tell it's bad. Botulism toxin has no smell, but it's easily neutralized by boiling. It's total fear-mongering. I have watched hundreds of canning videos, and no one ever says this! Google jt... if I'm not mistaken, it actually only needs to be 185 degrees F, and boiling is 212, so it's not like you could mess this up and put your family in danger. Again, Google it ... Very surprising, indeed!
Also, with most spoilage I think the lid starts expanding the wrong way, bowing up... but something called "flat sour" has a flat lid and a sour taste, and only happens with some fresh veggies like corn and green beans.

@@MD-dw5qg excellent! Definitely follow the recipes and the rules, and if you're in doubt about a particular batch and it's something you'll be cooking oh, no worries. Be smart, but don't be afraid!
@@MD-dw5qg also, the botulism bacteria is different than the toxin it creates. Higher temperatures are needed to kill the bacteria, lower temperatures to destroy its toxin, which most likely is not there. It sounds like most botulism cases in the US are things like potato salad, stuff that hasn't been cooked again before serving.

I cut my tomatoes up, put olive oil, garlic and onion and bake until they blister. Then freeze it. Then add to dishes or store bought pasta sauce. So good. No judgment for your meat processing. It's interesting. I personally can't meet my food and kill it. I'd rather just buy it from butcher.

You’re harvest is so beautiful! Congratulations on your peaches. We got our peach trees last year and one produced a peach this early summer. We were to hype lol I sliced that peach up and split it amongst my family of 5.

I purchased fertilized eggs and hatched them. I use a tote until they go outside. I add more bedding throughout the week. One the weekends I dump the old bedding into the compost pile, clean the tote and put new bedding in it.

You are learning valuable life skills. Better to practice now when you don't need it, so you are prepared when you do. I don't plan on raising meat birds but I want to know what to do if I need to. I can and dehydrate. I want a freeze dryer.
I just looked in my dehydrator book and they say it’s not safe to dehydrate eggs. Just fyi.
It depends on the dehydrator. Mine says they have to be soft scrambled before dehydrating

Nice harvest! I’m seriously thinking about quail because I live in an HOA area and, allegedly, they do not allow chickens. I’m still trying to decide, if I’m going to be a rule follower or rule breaker in this instance. 😂 Quail seem to be an option to consider, considering. 🤣. Got to get some of those Temu bags. Did you bag the beans and leave them on the counter or place then in the refrigerator, prior to your final processing? Sometimes I put mine in a container with a snap top, in the refrigerator. Other times, I’ve left them on the counter. Can’t decide if there’s much difference between the two. Can’t wait for the quail processing video. Thanks again for the inspiration!💜
Thank you! Quail are pretty quiet. I think they could be raised without being noticed by neighbors. Chickens are another story lol. I placed mine in the refrigerator. Never thought about leaving them out. You’re welcome!
