The millions-of-years-old elephantine "torso fused to the ship" Space Jockey is way more interesting than the couple-thousands-of-years-old "just another humanoid in a suit" Engineer.
7:58 "Make Space Jockeys and Engineers two different species! You cowards!" (spoken in Mr. Plinkett voice)
8:04 You can tell just by the massive arms that the Space Jockey is proportioned differently than an Engineer.

Right. They have to be separate species, for several reason. Sizes are different. One is fused to the ship and has an obvious exoskeleton-like body, whereas the other is a suit.

”Your world exists in an area of congregation, an area that has many inhabited worlds. You do not see this within your own Solar System, but beyond your Solar System, this is most certainly true. You do not live in a sparsely populated part of the universe. You do not live in a region that is uncharted and unknown to others. This gives you certain disadvantages because your world is being scrutinized by many powerful forces. They are seeking an Intervention now because humanity has reached a point in its development where it has built an infrastructure that other races believe they can use for themselves. This is why the Intervention did not happen at an earlier time. It was allowed for humanity to discover the resources and build the infrastructure first. In other words, you did the work for those who believe that you will serve them in the future.”
From The Allies of Humanity Briefings (online for free). Very interesting communication.

Thankfully now PROMETHEUS and Covenant are now sides stories within the ALIEN universe and the Space Jockeys and the Engineers are a separate race. This is now what Fade Alvarez presented to Ridley Scott and he liked it, since Disney disliked Scott's direction on his last 2 films.
The creatures in Scott's movies are now considered derived on the Xenomorph DNA, but are not Xenomorphs. The Xenomorphs are not created, but are a product of natural evolution and ancient, existing for Millions of years.
But what was also cool was that Álvarez came up with the idea that a Super Computer Virus that cannot be eliminated has Human Technology held back and that is why the tech on the 3 original films looks retro. As the PROMETHEUS and Covenant ships, they are one of a kind, a multi trillion investment from Weyland Yutani. So this is now what Scott agreed to have for the ALIEN universe by Fede Alvarez and may come up in ALIEN Romulus.

Ridley Scott took all the mystery out of the Space Jockey and left us with what we got in Prometheus. He basically did what Rian Johnson did to Star Wars. At least it's easy to ignore Prometheus and Alien Covenant since they weren't so heavily tied to the original Alien movies.

If the engineers were inspired by/ were preceded by an even older, advanced species, it may be that the malak’ak are that species and the engineers designed some things after them like their pilot chair/suits.

Yes, absolutely right and while I casually enjoyed both Prometheus and Covenant each as a 'stand lone' side shoot of the lore, they never 'organically' extended from the original Alien story line (c.f. Dan O'Banon et al story & script). The beauty magic and wonder of the Space Jocky & biomechanoid Juggernaut ship were pure genius: original imaginative and had great potential. They were the backbone of the Alien premise - albeit very little explored or developed in the franchise. Then ScottFree et al had to bring in the human origins / evolution / AI ideas (shamelessly stolen from 2001: A Space Odyssey) and the Black Goo (also (shamelessly stolen from the X-Files) supposedly to take the franchise into a 'new direction' ? Spare me, please! Least imaginative, least meaningful story and lacks integrity imagination and creativity. I wish that they'd let N Blomkamp bring in his Alien 5 (and the remaining original cast including Sigorney Weaver) instead of suffocating it the way they did. R Scott may have been the best thing that happened to the original Alien movie; but he's the worst thing that could have ever happen to the Alien Franchise.
Love the original Alien and the sequel Aliens (even Alien 3 and 4 to some lesser extent), but do not respect anything since - least in that list is that last mediocrity and joke of a 'sequel': Alien Ridiculous. It was so positioned between Alien and Aliens to subvert the lore and now they have an open doorway to steer the franchise into R Scott's wierd semi-mythical semi-religious incoherent crap, which had nothing to do with the original story & script.

I'm somehow not amused how it depicts the Mala'kaks especially with the more rudimentary mechanical look of its space suit technology with a mechanical gun. These beings were said to have biomech supremacy to a point they could construct literally anything out of their organic material engineered to perfection...like their juggernaut ship. The Giger's concept drawing of the chair pilot showed how it had a transparent dome over its skull which suggest it could be organic in nature but tough enough to resist impact. The dome was not seen in the movie since it was decayed away due to the age of the corpse which is also not known for how long. Heck theres a comic panel that showed an Engineer holding a biomechanical gun obliterating a horde of Xenos. These fan fictions isn't being consistent of the narrative the space jockey requires.

Fan-fictions? My brother in christ, these were as close to official as you could get.
You can definitely dislike the design, or think it didn't mesh with their aesthetic, but you're citing Ridley Scott's ideas from his after-the-fact reconning and changing of the source material of the movie he himself made. They were never the "Engineers" in the way Prometheus depicted them as UNTIL Prometheus. Anything prior to that was WAAAAY prior. Y'know. Like in these books and comics up until around 2003-2008

It was never meant to be explored. It's alien to us and left to our speculation.
One personal speculation is they were bio -weapons of the alien race, just as the company wanted to use them for, and in a rare instance, one escaped normally fool proof containment due to an unfortunate mishap/set of circumstances who knows, and the impregnation of the built in pilot resulted in the ship crash landing and the beacon being set up. The rest of the crew as Lambert alluded to with her question about them, were turned into those eggs was later to be revealed in the Nostromo, a detail cut from the film.

I'm surprised people don't focus on and dwell in the original purpose and intent of the "Space Jockey" in the first film. It's very very very simple.
Here's a ship. Something happened here long ago and it was terrible but too long ago we can't tell. However we suspect whatever terrible thing happened resulted in the death of many or the death of the pilot of the ship. The Space Jockey is there to remind us that even though it's big and exotic and strange ... That yet... Something else it was transporting was much more dangerous. That something is coming..a threat even worse then this huge strange thing. So yes the space jockey is an alien from long ago that was transporting these eggs. Why? Because they had a use for them obviously. Did they make them? Grow them? No I don't think so. The original vibe from the first film gives the impression that this human team that delivers space cargo runs into an ALIEN team that has some space cargo that's actually a dangerous living weapon. Whether or not the alien cargo shippers knew it was a weapon or not. They took care to take the eggs and transport them carefully. However something happened that ruined everything for them and didn't work out in their favor.
So the whole original concept is very simple and classic sci Fi.
Modern Humans who ship safe and non living elements through space run into ancient aliens who shipped dangerous living elements through space. The juxtaposition of the humans who ship cargo vs the aliens who ship cargo is a mirror image. A reflection. A foreshadowing. Ironic even.
That's the simple thing. That's all it was. But let's say we wanted to get more complex with the message and mirror images..
We could even compare the Android factors now.
Humans were sent on a mission to pick up unsafe cargo and didn't know it. Their Android on ship knew it and was a traitor and a dangerous thing.
Perhaps the mirror image to that is the aliens were shipping cargo with artificial life as well. And their artificial life also turned on them. We don't know. Is the xenomorph their artificial mirror image to our androids who would also turn against us and kill us?
Were the aliens who picked up the eggs to deliver them a victim of a set up as well? Did their blind journey into death mirror the one we see Ripley and crew go through?
I think there is strong evidence for this mirroring. It serves as a warning for what's coming not only in the movie but In real life as well. We are being warned in 1979 by this first film that artificial life can turn on us and will be so different from it's creators as to be like an alien found in space with no loyalty to us. In order to show us this message play out we have to see it happen to other creatures, aliens first. They had a creation, they had something dangerous, it turned on them, foreshadowing the fate of what happens to the humans next. The cycle is repeating.
    The pattern is set.
The biomechanical evolution and revolution is coming and we are all set to be replaced by it and consumed by it.
I would also note the similarity to this infectious xenomorph and the phalanx from marvel comics, the Borg from star trek, and the brood from marvel comics, and even symbiotes in marvel comics. The black ooze from this Prometheus detour seems to align with black symbiote alien shapeshifting, living,.goo in marvel comics. The original black suit for spiderman was this alien tech, alien life form, all in one... Enhanced him... But then tried to take over him.
These are strong themes of take over, infestation, possession, colonization, and invasion by a non human living, but technological entity. The mixture of alien life form /technology is present in the Borg by star trek, the Phalanx saga in Marvel, and the symbiote suit (originally a form of technology as mr fantastic MADE the suit from alien material... But it was alive).
What are all these warnings telling us? And is it compatible with the warnings we see in Terminator, Robocop, and Matrix franchises as well? I think so. There's a clear connection to all of these things warning us of a take over and extinction of mankind by something alive and cunning, thinking for itself, but also technological in form.
Before you say the Xenomorphs are just organic remember that their original concept was from HR Gigers art which is bio mechanical. The very nature of this stuff is the great organism of living tech. The living biological mechanical thing.

But its interesting to see how both alien species despise artificial beings, perhaps they feel like it´s cheating or just offensive?

this is just the problem of different writers adding whatever the fuck they want with no regards to consistencies. The engineers with suits in Prometheus was a perfectly acceptable origin to the first film; but this book complete contradicts the new movie. Fans are forced to do mental gymnastics to bridge the gaps and whole thing just becomes flimsy.
whatever joy we get from solving a mystery ultimately doesn't matter because it can just be changed on a whim. It's so disappointing. It renders everything pointless.
