I have been using this recipe for YEARS! I use oil instead of butter, and they come out perfectly. I do not brush the tops with butter either before or after baking, instead I do an egg wash. (feedback from family, the butter tasted great, but it was kinda oily on the fingers). I also cut the sugar in half - so if you ever need to conserve white sugar, the buns taste fine. Interestingly, cutting out the sugar entirely does't work. And, aside from the taste, no matter how juicy the burger is, the bun will not fall apart, nor will it compress down to a thin, soggy piece of bread!

I make my survival bread with milled Wheat Berries, yeast and honey. It is the best bread with minimal ingredients. I have made buns with it too. 4 cups milled flour, 1/4 cup honey and 1/2 TBLSP yeast

I just made these today. I made a batch for some salmon burgers we are going to have later in the week, and a batch of dough for the freezer. I've already had to hide them! I didn't understand when you said they were "phenomenal." I thought that was a bit of an exaggeration. It wasn't! These buns are over-the-top great. Better than any hamburger bun I have ever bought, let alone made. There is some density and they are so pillow-y. I am sorry I had doubts. I can't believe I actually made these. My family wants them as snacks, for garlic bread, etc. It seems a monster has been created. Thank you (I think!). They really are very good. Very, very good.
Thanks! I rarely buy any kind of bread or bun. It will be interesting to see what kind of ovens you will come up with, for baking bread when the power is down. Btw, I buy dehydrated egg powder from Bulk Foods in Toledo, Ohio. They have wonderful products that are priced fairly and they ship fast and at a reasonable cost.

I have made King Arthur’s buns for both hamburger and hot dog buns for years, and you are so right! It really is just the best! I also think the buns make wonderful garlic toast. I also have used the dough to make pretzel rolls, which is an extravaganza of flavor for sandwiches! I need to make some this week for pulled pork.

I made these tonight for the first time. I'm happy to report the process was easy and I wish I could post a smell LOL because these hamburger buns smelled AMAZING while baking. Then, my family and I tasted them...WOW! They were the perfect balance of soft and enough structure to hold the yummy toppings I added to my burger. Thank you, Pam, for showing me how easy this could be. 💛
We lived 300 miles south of the Arctic Circle with little access to a store. I made all our bread in a wood stove including hamburger buns. This sounds like a wonderful recipe. Thank you!!
Got to tell you. We had a scheduled power outage a week n half ago and I thought "what a great time to test" So I got out the camp stove but then decided to do it with my little butane stove like you have. I then got the camp oven out and it fitted nicely on top. I had forgotten that I needed smaller pans but luckily a regular bread pan fits diagonally. So I put a meat loaf into the oven and 40 minutes later it was finished. I was able to keep the oven at 350 , it used most of the butane. I had it outside and draped the top and both sides with foil to help with retention and wind. Those buns would have been a great companion with the meat loaf.

Making these today, I'm waiting for them to get puffy before putting them in my oven. This channel has helped me so much. Over the past 2-3 years, I was a disaster at making sourdough bread. I never made it before and went straight to trying to make sourdough with fresh-milled flour and everything would go wrong. I stepped back from the process and watched your 1st lesson in bread baking and the bread came out so good, my husband (also Jim) (no, not your Jim, my own Jim, lol - sorry about that!) woke up the next morning and said "I dreamed about toast!". I was limiting his bread because I didn't want him eating fillers, bleached flour, additives, etc., so he may be a bigger fan of yours than I am! Then I made biscuits - they came out so wonderfully (and thank you for showing all the options), that I bought egg corrals, to make my own, healthier, homemade versions of bacon, egg and cheese muffin sandwiches! If these hamburger buns make my husband happy, and keep him from buying the junky ones on store shelves, I might be sending you roses! Thank you, I'm grateful you're doing this! I also bought your books and printed them out for my binders - so if the grid goes down and I can't watch your videos, I have the instructions on hand!

Ok - update - I put some whole grain flour in with the mix, replacing 1 cup of ap flour. To offset that, I replaced a tablespoon of ap flour with vital wheat gluten, to help with rise. The hamburger buns came out kind of flat and dense. This morning, I toasted one for breakfast and was delighted to learn that it tasted like an amazing English muffin - much better than when I tried to make English muffins! So I'm calling it a win and am going to try the recipe again today, without changing the flour, to get that soft, high rise my husband likes that is closer to store bought, and will enjoy these buns for our breakfast. :)
I love the thoroughness with which you are approaching your book. The poached eggs hack to replace hard boiled was brilliant. And I appreciate the way you use simple tools anyone would own. I taught emergency preparedness years ago to a very poor LDS ward and had to realize extra were outside of their budgets. Hope you get well soon. You and Jim are treasures.

I made these. I think I may have over kneaded, I had to let buns rest ten minutes after put on sheet pan and squish then again to get the to 31/2 inches. It took another 45 for them to get puffy. My dish towel may have been to heavy so I switch to plastic wrap after 30 minutes. Turned out well. They taste great.
THIS is what I would like your next book to teach us. I request that you do a book about making the different kinds of bread from scratch. You could include a chapter dealing with how to turn wheat berries into flour. 😀👍🏻 I would love to have your favorite recipes (one each) for biscuits, rolls, hot dog buns, tortillas, flatbread, etcetera. In a grid down situation, we won't need tons of different recipes for each kind of bread, but it would be wonderful to know how to make a BASIC version of many different kinds of bread, just like this recipe for hamburger buns.

So after seeing this video today I decided we were having hamburgers for dinner lol. I made the recipe the same as you except I had a real egg and Red Star Platinum yeast. In Ohio it took about an hour and a half for the first rise, and a half hour for the second. They turned out wonderful. Nice and soft. Everyone loved them. Thank you for the recipe.
I was just watching King Aurthur flour on youtube to get back to making bread. I got lazy and have not made any in years. I made all our bread when the kids were little but lost my recipes.
I just had to make these after watching this...they turned out fabulous...I brushed with butter, and the egg white wash (put the extra yolk in the recipe) and sprinkled everything bagel on top...oh my goodness....I wrapped most of them individually and then in a freezer bag for the freezer....they are the best (and biggest) buns I ever made....thanks Pam !

You can use a cake pan in a Dutch oven with coals.
That is great that you have found a good source of bulk foods.

I use KA All Purpose Flour for this recipe, but you certainly could use part wheat, or even all wheat if you wanted.

Ok - update - I put some whole grain flour in with the mix, replacing 1 cup of ap flour. To offset that, I replaced a tablespoon of ap flour with vital wheat gluten, to help with rise. The hamburger buns came out kind of flat and dense. This morning, I toasted one for breakfast and was delighted to learn that it tasted like an amazing English muffin - much better than when I tried to make English muffins! So I'm calling it a win and am going to try the recipe again today, without changing the flour, to get that soft, high rise my husband likes that is closer to store bought, and will enjoy these buns for our breakfast. :)

I made these. I think I may have over kneaded, I had to let buns rest ten minutes after put on sheet pan and squish then again to get the to 31/2 inches. It took another 45 for them to get puffy. My dish towel may have been to heavy so I switch to plastic wrap after 30 minutes. Turned out well. They taste great.

THIS is what I would like your next book to teach us. I request that you do a book about making the different kinds of bread from scratch. You could include a chapter dealing with how to turn wheat berries into flour. 😀👍🏻 I would love to have your favorite recipes (one each) for biscuits, rolls, hot dog buns, tortillas, flatbread, etcetera.
In a grid down situation, we won't need tons of different recipes for each kind of bread, but it would be wonderful to know how to make a BASIC version of many different kinds of bread, just like this recipe for hamburger buns.

So after seeing this video today I decided we were having hamburgers for dinner lol. I made the recipe the same as you except I had a real egg and Red Star Platinum yeast. In Ohio it took about an hour and a half for the first rise, and a half hour for the second. They turned out wonderful. Nice and soft. Everyone loved them. Thank you for the recipe.

I was just watching King Aurthur flour on youtube to get back to making bread. I got lazy and have not made any in years. I made all our bread when the kids were little but lost my recipes.
If you have a bread maker, you can use the dough setting to get it ready to form into buns. Much easier.
We have several videos on bread making and a couple of good recipes with those videos, if that would help.
I just had to make these after watching this...they turned out fabulous...I brushed with butter, and the egg white wash (put the extra yolk in the recipe) and sprinkled everything bagel on top...oh my goodness....I wrapped most of them individually and then in a freezer bag for the freezer....they are the best (and biggest) buns I ever made....thanks Pam !
