- Thecha Noodles Recipe - A Spicy Fusion Delight
Thecha is a fiery Maharashtrian chutney made with green chilies, garlic, and peanuts. When combined with noodles, it creates a bold and flavorful fusion dish that’s perfect for spice lovers.
Ingredients
For Thecha (Spicy Chutney):
8-10 green chilies
6-7 garlic cloves
2 tbsp roasted peanuts
1 tbsp coriander leaves (optional)
½ tsp salt
1 tbsp oil
For Noodles:
200g noodles (Hakka or any of your choice)
1 tbsp oil
½ tsp cumin seeds
½ cup bell peppers (thinly sliced)
½ cup carrots (thinly sliced)
½ cup cabbage (shredded)
½ tsp soy sauce
1 tsp vinegar
1 tsp chili sauce (optional)
Salt to taste
Instructions
Step 1: Prepare Thecha
Heat oil in a pan and sauté green chilies, garlic, and peanuts until slightly charred.
Let it cool, then grind into a coarse paste with salt and coriander leaves.
Keep aside.
Step 2: Cook Noodles
Boil water in a large pot, add some salt and a little oil.
Add noodles and cook until 80-90% done.
Drain, rinse with cold water, and toss with some oil to prevent sticking.
Step 3: Make Thecha Noodles
Heat oil in a pan, add cumin seeds.
Add chopped vegetables and stir-fry on high flame until slightly crunchy.
Pour in soy sauce, vinegar, and chili sauce (if using).
Add cooked noodles and mix well.
Stir in the prepared thecha and toss everything together for 2-3 minutes.
Serve hot, garnished with crushed peanuts or sesame seeds for extra crunch.
Tips:
Adjust chili quantity in thecha based on spice tolerance.
Add tofu or paneer for extra protein.
Garnish with fresh coriander or spring onions for freshness.
