  • Aloo bhujiya is a popular Indian snack made primarily from boiled potatoes, gram flour (besan), and a blend of spices. It's a crispy, savory snack that is often enjoyed as a tea-time treat or topping for chaats and other dishes.
    Ingredients:
    2 medium-sized boiled potatoes (mashed)
    1 cup gram flour (besan)
    1/4 teaspoon turmeric powder
    1/2 teaspoon red chili powder
    1/4 teaspoon garam masala (optional)
    A pinch of asafoetida (hing)
    Salt to taste
    1 tablespoon oil (for the dough)
    Oil for frying
    Instructions:
    Prepare the Dough:
    In a mixing bowl, combine mashed potatoes, gram flour, turmeric powder, red chili powder, garam masala, asafoetida, and salt.
    Add 1 tablespoon of oil and mix well.
    Knead the mixture into a smooth dough. If it’s too sticky, add a little more gram flour.
    Shape the Bhujiya:
    Grease a sev maker or piping bag with a fine-holed disc.
    Fill the sev maker with the prepared dough.
    Fry the Bhujiya:
    Heat oil in a deep frying pan over medium heat.
    Press the dough through the sev maker directly into the hot oil in circular motions.
    Fry until golden and crisp, flipping once.
    Drain and Store:
    Remove the bhujiya from the oil using a slotted spoon and place it on a plate lined with paper towels to absorb excess oil.
    Once cooled, store in an airtight container.
    Enjoy aloo bhujiya as a standalone snack or as a crunchy addition to your favorite dishes!
